beat the heat cupcakes

Summer in the Portland area has been a bit lame. While most of the country swelters we are expecting a high of seventy two degrees for tomorrow. We have been experiencing cloudy cool mornings and warmer but humid afternoons. It's the coolest summer I can remember having in I don't know how long. I'm blaming it all on El Nina. Or is it El Nino??

Anyway, I was feeling for those of you living in the mid west and on the east coast. I know you would probably rather cut off you left foot than turn on your ovens so I thought I'd do a little re-posting.

These are two of my favorite cupcake recipes from last summer when we actually had some heat to deal with. My family thought these were fun and delicious and perfect for beating the summer heat!

The first one is a grilled cupcake in an orange rind.

The second one is a brownie cupcake topped with Nutella, ice cream, whipped cream and chocolate shavings. I did bake the brownies in the oven but really they can be "baked" on the grill as well.

Check both of these out if you have time. I know you'll love 'em!

I am all about cooking on the grill, thanks for posting these recipes in will be making them soon, and orange and chocolate are such a great combination! One of my favorite things to grill is pizza. Aside from the obvious toppings harvested from the garden, I LOVE bar b q chicken pizza grilled. If you haven't tried it you must!

Boy can I relate. The weather here in Seattle has been depressing to say the least. Still, I know others are sweltering in the heat, so I guess I shouldn't complain.

Both cupcakes are lovely, but that first one is a cool cupcake idea! I've seen sorbet served in orange shells...but never a cupcake. Yum.
