vanilla sugar scones

IMG_0276

This past weekend I was in the mood for scones. Warm, flaky scones. I searched through my cupboards, my fridge, my freezer...on the lookout for inspiration. First, I thought maybe dried fruit and nuts...or some fresh or frozen berries. No. Not this time. I wanted something simple. That's when I spotted my White Pine Vanilla Sugar. I'd been trying to find the right recipe to add it to. Scones would be the perfect thing!

I found a nice basic scone recipe on the King Arthur Flour website.

These scones had a lovely vanilla aroma and just a touch of sweetness. I served them with some cheesy scrambled eggs and fresh fruit. Oh, and of course, a little coffee too. Yum! This breakfast hit the spot!

Vanilla Bean Scones
adapted from king arthur flour

2 3/4 cups unbleached all-purpose or whole wheat pastry flour
1/4-1/3 cup vanilla sugar
1 tbsp baking powder
3/4 tsp salt
1/2 cup cold butter, cut into pieces
2 large eggs
2 tsp vanilla extract
1/2-2/3 cup half and half

Preheat oven to 425.
In a large mixing bowl, whisk the dry ingredients. Cut in the butter just until the mixture is unevenly crumbly. In a separate bowl, whisk together the eggs, vanilla and half and half. Add the liquid ingredients to the dry ingredients and stir until all is moistened and holds together. Line a baking sheet with parchment. Sprinkle a bit of flour over the parchment. Place the dough onto the parchment and divide it in half. Round each half into a 5" by 3/4" thick circle. Brush with half and half and sprinkle with a bit more vanilla sugar. Using a knife run under water, cut each circle into wedges and separate a little. Bake scones for 15-20 minutes until golden.

Note: The original recipe recommends placing the scones into the freezer for 30 minutes before baking for a higher rise. I was pressed for time so I skipped this step.

Give these a try, I know you'll love them!

Have a fantastic week!

Hey Kim, these scones look wonderful-very tempting (wink). And I can tell you got the perfect texture to them. Some people accidentally work scone dough too much, and the gluten makes them weird. Perfect yours look!

I love the idea of scones, but mine always turn out like hunks of lead. Yours look delicious, though!

I have a little vanilla sugar that's been feeling a little lonely at the back of the pantry.
I should soon relieve it from its misery ;o)

Thanks for this aromatic scone recipe.

Ciao for now,
Claudia

Yum vanilla sugar. I must admit, I have never made scones... I did work in a bakery and made them there, but never on my own. This looks like a great recipe to pull me into the world of scone making! I always keep vanilla sugar on hand with my leftover vanilla beans. Delicious! Megan
