As I was flipping through my mother-in-laws April issue of BH&G, I spotted something that looked sort of like this. The original was on toast instead of mini bagels and there were snipped fresh herbs involved. I thought the bagels would be fun. Unfortunately, there are no fresh herbs in my fridge at the moment so I used a bit of dried dill and some fresh cracked pepper. It worked out just fine and dandy.
There really is no detailed recipe for this. Just mix together some Dijon and mayo, slice up some hard boiled eggs, toast up a bagel or two, throw it all together and sprinkle with your favorite herb and a smidge of cracked pepper and you're good to go. Oh yes, and don't forget coffee and a good read to make the meal complete!
This is my new favorite breakfast!
I'm sure you can think of a million different ways to jazz this up. Give it a try. Have fun with it! Get Jazzy!!
Happy Friday!

i LOVE bagels!
I love this. I love anything with eggs, and breakfast is totally my favourite meal of the day.
Have a fabulous weekend ahead.
*kisses* HH
They would very likey be my favourite breakfast too!
You had me at "dill". These little bagels look amazing... makes me miss bagels a little but!
Yum, sounds great! I could also use tuna salad, with the hard-boiled eggs, to kind of make a tuna nicoise sandwich!
That looks great!
I love eggs. They have such a great flavor and are SO underrated in my opinion. What a delicious breakfast!
These looks yummie and they are my favorite too! I think im gonna make some over the weekends! Have a lovely merry happy weekend and love to you!
I would love this!!!
That looks fantastic, I think it might actually have to be our dinner tonight..
Looks like the perfect way to start the day to me.
Simple yet so satisfying!
Oh love those eggs on bagels. Anything with eggs is good enough for me:D
Looks very good.....and easy too!
I love to read while I eat. (or blog) ha
Eggs and bagels. Works for me. Simple easy.
Lovely - I could even get it together to get breakfast on the table with this dish!
This looks so simple and yummy! Kind of like deconstructed egg salad on a bagel. I am a huge fam of mini bagels, and actually have more fresh dill than I know what to do with, so this will be agreat way to use it. Yum!
This totally works for me!
What a special breakfast! I love it on the mini bagels. I bet it would even be great for lunch.
i have a feelng that this could quickly become my favorite breakfast too!
If we lived closer I would stalk you and hope that you would want to be my friend and cook for me. In a non creepy way of course. HA!
I have had many a luncheon like this! I don't think I could stomach eggs for breakfast! Looks like you had a nice relaxing time!
