my new favorite breakfast

As I was flipping through my mother-in-laws April issue of BH&G, I spotted something that looked sort of like this. The original was on toast instead of mini bagels and there were snipped fresh herbs involved. I thought the bagels would be fun. Unfortunately, there are no fresh herbs in my fridge at the moment so I used a bit of dried dill and some fresh cracked pepper. It worked out just fine and dandy.

There really is no detailed recipe for this. Just mix together some Dijon and mayo, slice up some hard boiled eggs, toast up a bagel or two, throw it all together and sprinkle with your favorite herb and a smidge of cracked pepper and you're good to go. Oh yes, and don't forget coffee and a good read to make the meal complete!

Yum, sounds great! I could also use tuna salad, with the hard-boiled eggs, to kind of make a tuna nicoise sandwich!

This looks so simple and yummy! Kind of like deconstructed egg salad on a bagel. I am a huge fam of mini bagels, and actually have more fresh dill than I know what to do with, so this will be agreat way to use it. Yum!

Hi Kim, I absolutely love bagel and egg with coffee too. A simple and delicious treat it is, and i think very underrated. You've inspired me to go get some bagels. I rarely do, but they are such a nice treat...
