nature's perfect whole food

Have you heard about Salba? I hadn't either until Salba Smart asked if I would be interested in sampling a few of their products. Just take a look at all of these goodies! Salba is an ancient grain. It is a whole food. It is gluten free. It is jam packed with super nutrition for your body! Research has shown that Salba lowers blood pressure, lowers risk of cardiovascular disease, lowers C-reactive protein and increases satiety.

It has 8 times more Omega-3 than Atlantic salmon, 6 times more calcium than milk, 3 times more iron than spinach, 2.8 times more antioxidants than pomegranates, 15 times more magnesium than broccoli and 1.1 times more fiber than All-Bran.

The seed for planting is grown in separate plots to prevent cross hybridization and degradation of the grain. This is a very good thing!

There are a variety of products to choose from. I had the opportunity to try the tortilla chips, salsa and whole Salba seed.

My son loved the yellow corn tortilla chips the most. I thought the blue corn chips were very tasty. The salsa was delicious too! I am planning on using the whole seed in a granola bar recipe.

I used the last jar of my salsa in tonight's dinner. I threw together a little Taco Mac. It was a big hit and so quick and easy to prepare.

Taco Mac

Print recipe

1 lb ground turkey
1 package taco seasoning
1 can kidney beans, drained and rinsed
1 jar of Salba Smart Organic Salsa
1 4 oz can of tomato sauce
1/2 cup water
1/2 cup elbow macaroni
1/2 cup frozen corn

sour cream
grated cheddar cheese
diced tomato

In a large skillet brown the ground turkey. Stir in the taco seasoning. Add the beans, salsa, tomato sauce, water, macaroni and corn. Bring to a boil. Reduce heat. Cover and simmer for 10-12 minutes until macaroni is tender, adding more water if needed.

Garnish with sour cream, cheese and diced tomato and whatever else floats your boat. ;)

I am so excited to have the opportunity to try these amazing products! I will most definitely be purchasing them on a regular basis.

Never heard of Salba, but since its an ancient grain and is included in the whole foods, I guess it is not genetically modified unlike other grains. So might be more difficult to harvest, but all worth it...

You now, I JUST saw this at Whole Foods. Hadn't heard of it before, but seems to be a cousin of quinoa and amaranth? Anyway it was pretty expensive so I didn't buy it, but plan to try at some point!
