Whole-Wheat Banana Cranberry Chocolate Chip Muffins


A big thanks to all who were able to participate in last week's BSI challenge. I am going to take today to review all of the recipes and I will let you know the winner in tomorrow's post. It's going to be a tough choice. They all look so fabulous!

I found the idea for these muffins at a nifty blog I discovered a couple of days ago called The Sisters Cafe. They have some terrific recipes over there! Anyway, I changed the recipe a bit adding the cranberries, swirl chocolate chips and yogurt. My daughter told me these were the greatest muffins she has ever tasted. Wow! What a compliment! :0)



Here is my recipe:
  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 3/4 tsp baking soda
  • 1/2 salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1-2 ripe bananas, sliced thin
  • 1/2 cup plain non-fat yogurt
  • 1/4 cup honey
  • 2 large eggs
  • 2 cups whole wheat flour
  • 2/3 cup swirl chocolate chips
  • 1/2 cup dried cranberries
Beat together the butter, sugar, baking soda, salt, cinnamon and vanilla until smooth.



Add the banana, yogurt, honey, and eggs, beat until smooth.



Add the flour, stir until smooth.




Fold in the chocolate chips and cranberries.



Align Left
Divide into 12 lined muffin cups. They will be nearly full.




Bake at 350 degrees for 15-18 minuted until toothpick inserted comes out clean.


So, bake up a batch of these yummy muffins, grab your favorite mug, fill it with your warm morning beverage of choice, sit back, and enjoy!

Banana, cranberry, whole wheat and to add on to it it please the sweet tooth with chocolate. I wouldn't mind eating three, maybe four of these at one time. Yum!
