A big thanks to all who were able to participate in last week's BSI challenge. I am going to take today to review all of the recipes and I will let you know the winner in tomorrow's post. It's going to be a tough choice. They all look so fabulous!
I am now passing the baton over to girlichef (one of my absolute favorite food blogs). Head on over to Heather's blog to see what she has chosen for this week's challenge. I can't wait to see what she came up with! :0)

I found the idea for these muffins at a nifty blog I discovered a couple of days ago called The Sisters Cafe. They have some terrific recipes over there! Anyway, I changed the recipe a bit adding the cranberries, swirl chocolate chips and yogurt. My daughter told me these were the greatest muffins she has ever tasted. Wow! What a compliment! :0)
Here is my recipe:
- 1/2 cup butter
- 1/2 cup packed brown sugar
- 3/4 tsp baking soda
- 1/2 salt
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1-2 ripe bananas, sliced thin
- 1/2 cup plain non-fat yogurt
- 1/4 cup honey
- 2 large eggs
- 2 cups whole wheat flour
- 2/3 cup swirl chocolate chips
- 1/2 cup dried cranberries
Beat together the butter, sugar, baking soda, salt, cinnamon and vanilla until smooth.

Banana, cranberry, whole wheat and to add on to it it please the sweet tooth with chocolate. I wouldn't mind eating three, maybe four of these at one time. Yum!
