Chicken Gyros with Oikos Greek Yogurt Dressing

I was recently contacted by Stonyfield Farm to try their Oikos Greek Yogurt and post a review on this here blog. Well, I was super excited because I love Greek Yogurt! This one is especially good. It's zingy, creamy and full of flavor! I also love that it's organic! It can be used in a ton of recipes from entrees to desserts.

It took me a bit to decide on a recipe. I finally settled on this one.

I marinated 10 chicken tenders all day in these fabulous ingredients:
  • juice from 1 lemon
  • 1 1/2 tsp minced garlic
  • 1 tsp oregano
  • 1/2 tsp marjoram
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • cracked pepper
Then I placed it on the grill to cook.

For the dressing I used:

  • 1 cup of Oikos Greek Yogurt
  • 1/2 cucumber, peeled and grated
  • 1/2 tsp minced garlic
  • 1/2 tsp oregano
  • pinch of dill
  • 1 tsp olive oil
  • 1/2 tsp salt

First, squeeze as much water out of your cucumber as you can, a paper towel works great for this. Next, place all of your ingredients into a bowl and stir to combine. Place in the fridge for at least an hour to allow the flavors to come together nicely.

Place chicken on a piece of warmed flat bread and garnish with grated cucumber, diced tomato, leaf lettuce, sliced green onion, and dressing.

I made potatoes brushed with olive oil and sprinkled with a mixture of kosher salt, paprika, oregano, onion powder, and cracked pepper to go with the Gyros. I placed them in a 425 degree oven to cook and then finished them under the broiler to brown them just a touch more.

This was a terrific meal! I hope you will give this recipe and this sensational yogurt a try!

Oh, man! Every time I come on your blog you have a new, wonderful recipe. That one looks so yummy.

I printed out meatball sandwich on flat bread, but life got crazy yesterday and I couldn't make it to the store. I was telling my mom about your site yesterday - I love it! I am printing this one out too and taking it to the store tomorrow. Thanks!

XOXO

I love Gyros and I know I would like these with chicken. I've never made them at home but after seeing these, this recipe will be going on my "have to have" list.
Of course I can't resist the beautiful potato slices either.

That whole meal looks fabulous. I do roasted potatoes like that, but I've never thought to cut them in thick slices before. I like the way that looks.

This is something I want to try, but was wondering if you could clarify the use of the cucumber. Was there shredded cucumber in the dressing AND on the side, or was it just on the side?
