Grilled Cilantro and Lime Chicken with Fresh Heirloom Tomato Salsa



So, earlier I was over at For the love of cooking and I have to tell you that there is an amazing Southwestern Salad on there right now! You really should check out! Anyway, that salad recipe got me thinking and I came up with this Chicken and Salsa recipe.

We are eating as I post this and let me tell you, I can hardly keep from going outside and shouting to all of my neighbors to come on over and join us! (Actually, I would never really do anything like this, I am far too subdued!)


Here are the ingredients you will need to make this dish.

For the Chicken you will need:
  • 4 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • juice from one lime
  • 1 clove garlic, minced
  • 1/4 cup chopped cilantro
  • 1 tsp kosher salt
  • 1/4 tsp pepper
  • 1/4 cup white wine (Sorry, I forgot my wine in the photo!)
Place all of the ingredients into a sturdy Ziploc bag. Seal and shake a little to combine. Open bag and add your chicken. Place into the refrigerator for several hours or overnight. Remove chicken from bag and place on a medium grill. Cook about 10 minutes on each side until internal temperature reaches a minimum of 165 degrees. Serve with Salsa and Rice.


Here is how to make this flavorful salsa.
  • 2 cups heirloom cherry tomatoes, quartered
  • 1 cup tri-colored peppers, diced
  • 1/4 cup chopped cilantro
  • juice from 1 lime
  • 1/2 tsp minced garlic
  • 1 cup fresh or frozen corn
  • 1/2 cup black beans, drained and rinsed
  • 1 tsp olive oil
  • 1 tsp kosher salt
  • 1/4 tsp black pepper (White pepper would be even better.)
Place all of your ingredients into a large bowl. Stir to combine. Refrigerate several hours or overnight so that all of these fabulous flavors come together!

This is a perfect warm weather dish. It's light, fresh and wonderful!

In answer to your question, I do try other peoples recipes and then I post about them with a link back to their blog. I sometimes follow the recipe as is or I adapt them to suit my family's tastes.
