Easy Tuna Melts


My Husband is on-call for his job this week so he usually misses dinner. Last night it was just the kids and I eating, so we decided on these yummy tuna melts! I love making these for lunch or a light dinner!
(It's a good thing the name of my blog is the Ungourmet or that big blob of avocado on my muffin would be pretty embarrassing!)


Here is what we put into our little melts.
  • 1 can tuna, packed in water
  • 1 large dill pickle, chopped
  • 1 1/2 tbsp mayo
  • 1/2 tsp dried dill
  • 1/4 tsp pepper
  • shredded cheddar
  • 1 avocado sliced
  • green leaf lettuce
  • 1 English muffin split and toasted
Mix up your tuna salad. On 1/2 of your muffin, place a generous scoop of the tuna salad. Top with shredded cheddar. Place under the broiler a couple of minutes until it's all melty. Remove from oven and top with avocado slices and lettuce. Place other 1/2 of muffin on top if you wish or just eat it open faced if you don't want all of that bread. Serve with a nice green salad for an easy and delicious meal.

I never would have thought to put tuna on an english muffin. Sounds great. My husband loves tuna salad. He is requesting it for dinner one night next week.

I've never had a tuna melt but it sure looks good, especialy with the avocado. Great site and sure looks like you're a good cook.
