Chicken Quesadillas



This is a super easy meal to put together when it's been a busy day. It's easy and tastes great!

I mix it up and little each time. This is how I put it together this time.

  • 2 boneless skinless chicken breasts
  • 1 15 oz can diced tomatoes with green chilies and spices
  • 1/2 tsp cumin
  • 1 can refried beans
  • cheddar cheese, grated
  • flour tortillas
Cook your chicken in 1 tbsp vegetable oil or a little spray oil. Place chicken on a cutting board and shred with two forks. Return to pan. Stir in your can of tomatoes and cumin. Simmer for 10-15 minutes. Warm your beans. Layer your beans, chicken, and cheese on 1/2 of one tortilla. Fold over and cook on a warm griddle until nicely browned and melty. Top with sour cream or if you are a nut like me, a mixture of ketchup, mayo, and chili powder. Serve with veggies and/or a nice green salad.

I make chicken quesadillas sometimes. We have a quesadilla maker so it makes it easy.

Oh, and in response to your comment on my blog: yeah, I had to get rid of my poor PT Cruiser. :( But I am enjoying my Honda.
