Pumpkin Bread Pudding

I know this sounds gourmet but it is really quite simple to make and oh, so yummy!

You will need to have the following ingredients:

  • 2 cups half and half
  • 1 15 oz can of pumpkin pie mix (plain pumpkin mix will also work just dandy)
  • 1 cup brown sugar
  • 2 large eggs
  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp vanilla
  • 1 loaf of cinnamon raisin bread cubed
  • 1/2 cup raisins and/or pecans, if desired
Heat your oven to 350 degrees. Get out a great big ol' bowl and whisk half and half, pumpkin, brown sugar, eggs, pumpkin pie spice, cinnamon, and vanilla. Fold in the cubed bread. Stir in the raisins and nuts if you wish. Transfer mixture to a 11x7 glass baking dish. Let this sit so the bread can soak up all of the goodness. Bake around 40 minutes or so until an inserted toothpick comes out clean. Allow to cool just a bit and serve warm with fresh whip cream. P.S. If you like things on the sweeter side you can drizzle a little caramel over the top of this.
