brownie bites and a fun gift

IMG_1847

The month of March has most definitely come in like a lion; at least that's the way it's been for me. Busy. Busy. Busy. Busy with my birthday (39 again...yes!), cupcake parties, conferences, work, school, home, family, realtors...it goes on and on. I'm sure it's the same for you. Hopefully things will slow down a bit and there will be time for baking. Time for kicking back and watching an old movie. Time for enjoying all of the daffodils, tulips and cherry blossoms. Out with the moss and in with the roses. I'm so ready for spring!

All of this rambling has nothing to do with brownie bites. Oh well. I'm crazy with spring fever! ;D

As some of you know, I have a business called Cupcake Academy. It is a cupcake baking party business and it's a whole mess of fun! A very dear friend of mine bought me this fantastic mini cupcake maker for my business. Have you seen these? They are amazing! They are sort of George Foreman-ish in design but instead of cooking up burgers or steak they bake up 8 mini cupcakes...or brownies...or muffins...or pies in about 8 minutes. I could just kiss the mastermind behind this fun invention. Why didn't I think of this? Darn it!

So anyway... My kids and I whipped up an amazingly rich and chocolaty brownie recipe and popped it into the Babycakes and before we knew what hit us, we were all jacked up and in chocolate heaven.

Thank you Heather for your wonderful gift! When are you and your kids coming over for a mini cupcake party??

This Brownie Bite recipe comes from my Ice Cream Brownie Cupcake post from July 2009. This time we used white chocolate chips just for fun. If you don't have one of these fabulous contraptions, just use your regular old oven. It'll work just fine and dandy!

Hope you all are having a fantastic week!
