Breakfast Salad

So just what is a girl...or boy to do with leftover arugula, feta, diced tomato and turkey bacon you ask. Why toss it all together, throw a scrambled egg on top and call it a breakfast salad! ;D

I'm officially in love! This salad is light and nutritious and most of all, it's darn delicious! Change is in the air my friends. The birds are singing. The trees are blooming.
Spring is on the way! All of this springy-ness puts me in the mood for lighter meals. This salad would be terrific anytime of day. I'm thinking next time I'll toss a poached egg on top. Yum!

When you think breakfast, think salad! :)

I also wanted to take a minute to share something. I hope you won't mind. For as long as I can remember I have had stomach issues. Pain, bloating, cramping, indigestion... I have suspected for years now that I may have issues with gluten. It really bums me out to think of cutting out wheat. I love eating a nice thick slice of warm homemade bread. I love muffins, biscuits, scones, biscotti, cupcakes, pie... I've been doing quite a bit of research and it seems that gluten free baking has come a long way. It looks like I won't have to completely give up eating the things I love after all. I'm really hoping going gluten free will make a difference for me.

Funny but I never thought about salad for breakfast! My mom will love this I'll send her the link.

Gluten - a friend of mine actually did some experimenting on herself and linked it with her seizures. She no longer has them since she cut out gluten. Crazy.

Breakfast salad? Yes! I don't like traditional breakfast food, so this looks right up my alley!

Salad for breakfast sounds awesome to me! What a pretty and colorful way to start the day!

Also, if you're really thinking that you have a gluten intolerance, it just takes a simple blood test to find out for sure! So it might be worth getting that checked out before you make vast changes to your diet!

I think I would be in love too. I would usually scramble all that stuff into my eggs, but it looks so much prettier like that! And looks so fresh too!

Oh Wow....breakfast salad.....what a great idea! I love salads but never thought about one for breakfast!

So sorry that you are having problems. My daughter suffers from all sorts of stomach pains and has since she was a toddler! I know that it is not easy to deal with. I hope you find a solution soon.

Salad for breakfast? Sure I'd tried it...it is a great idea...after all is it healthy and contain everything that a "normal" breakfast will have :-)
