slow cooker tortilla soup

I thought I'd take a little muffin break to share this yummy tortilla soup recipe with you. I had a recipe in mind and then a friend sent me one that looked even tastier. In the end, I came up with one of my own. It was my first attempt at tortilla soup and I have to say, it was pretty darn good.

This soup is so easy and packed full of spicy good flavor!

Slow Cooker Tortilla Soup

1 1/2 lb diced chicken (I used boneless chicken breast..uncooked)
1 can Rotel diced tomatoes with lime and cilantro
1 can or bottle of enchilada sauce (Trader Joe's has a great one!)
4 cups chicken broth
2 cloves chopped garlic
5-6 small corn tortillas, cut into 1" pieces
2 tbsp canola oil
juice from 1/2 lime

For Garnish
Cilantro
sour cream
diced tomato
*fried corn tortillas strips

Place all ingredients into slow cooker. Cook on high for 4-5 hours or 7-8 on low. Top with cilantro, sour cream, diced tomato and fried corn tortillas strips. Avocado would be amazing as well!

*To make the tortillas strips- Heat 1/4" of canola oil in a pan. Cut corn tortillas into thin strips. Fry until golden brown. Place on paper towels and season with kosher salt.

My husband really loved this soup as well and let me tell you, that says a lot! ;)

Ooh I'm obsessed with using my slow cooker. Never quite sure how to make anything other than broth or soup though. Oh well! Yep, starting to look like fall here in Boston and definitely chilly :-)

The leaves are definitely starting to change here, but so far only up in the mountains. But that is where I work, so I get to see them almost every day :)

This recipe does sound good, Kim! And it's been such a long time since I've had a bowl of tortilla soup. I might have to actually use my slow cooker-it's been a while. Ooh, and I have avocados dropping from the tree outside, so this is perfect!
