I thought I'd take a little muffin break to share this yummy tortilla soup recipe with you. I had a recipe in mind and then a friend sent me one that looked even tastier. In the end, I came up with one of my own. It was my first attempt at tortilla soup and I have to say, it was pretty darn good.
This soup is so easy and packed full of spicy good flavor!
Slow Cooker Tortilla Soup
by theUngourmet
1 1/2 lb diced chicken (I used boneless chicken breast..uncooked)
1 can Rotel diced tomatoes with lime and cilantro
1 can or bottle of enchilada sauce (Trader Joe's has a great one!)
4 cups chicken broth
2 cloves chopped garlic
5-6 small corn tortillas, cut into 1" pieces
2 tbsp canola oil
juice from 1/2 lime
For Garnish
Cilantro
sour cream
diced tomato
*fried corn tortillas strips
Place all ingredients into slow cooker. Cook on high for 4-5 hours or 7-8 on low. Top with cilantro, sour cream, diced tomato and fried corn tortillas strips. Avocado would be amazing as well!
*To make the tortillas strips- Heat 1/4" of canola oil in a pan. Cut corn tortillas into thin strips. Fry until golden brown. Place on paper towels and season with kosher salt.

My husband really loved this soup as well and let me tell you, that says a lot! ;)
I'm still waiting for the leaves to change here. Is it looking like autumn over your way yet?

This looks delish, Kim. It's easy to put together and I bet your house smelled fantastic as it simmered away.
Ooh I'm obsessed with using my slow cooker. Never quite sure how to make anything other than broth or soup though. Oh well! Yep, starting to look like fall here in Boston and definitely chilly :-)
I love being able to make anything in a slow cooker! This soup looks so yummy, I am going to try it this week. Thanks for sharing!
The leaves are definitely starting to change here, but so far only up in the mountains. But that is where I work, so I get to see them almost every day :)
Perfect weather for soup! Hurray! This one sounds simple and was given the stamp of approval, worth trying.
This soup looks amazing. I wish it was possible to reach right through the computer monitor, and take a little sample :)
I love this kind of spicy soup too! Warms you up on a cold day!

This one's going in the recipe file! You had me at slow cooker!
Slow cooker soup recipes are the BEST! And if YOUR husband approved it then it must be amazing. Yum.
I would love to come home to this warming, delicious soup after a long day at work! I bet the house smells heavenly. :)
oo I've never thought of using enchilada sauce like this. Great idea!
It sounds like the kind of soup that could use a muffin to go with it... perhaps a corn muffin. :)
I think it's time for me to lug out my slow cooker once again. Mmmm...
Slow cooker recipes are my favorite. Easy and yummy!
Yum...Yum!!!That soup looks fabulous:)
Yumminess! I wish everybody in my house liked soup as much as I do...we'd have it every day, starting with this one.
Mmm this sounds nice, I think I need a slow cooker!
Have a great day,

I absolutely love slow cooker soups...I've made a salsa chicken slow cooker soup that is awesome so I can't wait to try this!
This recipe does sound good, Kim! And it's been such a long time since I've had a bowl of tortilla soup. I might have to actually use my slow cooker-it's been a while. Ooh, and I have avocados dropping from the tree outside, so this is perfect!
If I can make it in my slow cooker I'm there!
What a delicious and comforting soup to welcome Autumn!
Oh man, Kim! I wish you would link this up to my quest! I haven't seen ya in a bit, but I've been on a quest to find THE tortilla soup! Just did roundup #2 yesterday. Hope you link it up so I can include it in the next roundup...it sounds delicious :D
A friend of mine made a recipe like this for us once and it was really good. I was on the verge of e-mailing her and asking her what the recipe was, but maybe I will just steal yours, instead! ;)
Sounds and looks great! I am so glad it is finally soup weather.
Tortilla soup is one of my faves! This looks wonderful and is a good way to put my new crock pot to use. No pretty leaves here - just some ugly brown ones.
Beautiful soup...I love soups prepared in slow cookers during the fall and winter months especially. The house fills with the best aromas :)
I bet your kitchen smelled amazing! I love that you used enchilada sauce as a base! MMM!
Ooooh. Love tortilla soup. I just bought the ingredients to make a new tortilla soup recipe-on my meal plan for next week. Love that you made this in the slow cooker. It looks awesome!
I have seen so many bowls of tortilla soup in the blog world and every single one makes me drool. Yours is no exception! Great recipe and the perfect cool weather soup!
Sounds delish Kim. I am putting this on my list for next Thursday.....so when soccer practice is done, dinner will be too!
