I panicked this evening as I sat down to put this post together. A couple of days ago I jotted down this muffin recipe on a piece of scratch paper as I was measuring, mixing, baking and savoring and today as I went to grab that batter splattered scrap of paper I couldn't find it anyplace. I have so many pieces of paper sitting around my kitchen with hand written recipes and recipes printed up from other blogs and websites. Hello, my name is Kim and I'm a recipe hoarder. Oh, I feel much better now. They say admitting you have a problem is the first step. Anyway, finally I spotted that little scrap. Whew!
This recipe started with a little jar of cider apple butter! I just love apple butter. It's a perfect blend of apples, sugar and spice. It's so very nice!
I also used whole wheat pastry flour, grated apple, buttermilk, cinnamon, nutmeg, cloves, fresh ginger, and ground golden flax. They are so moist, lovely and full of autumn goodness.
I whipped up some cream cheese, cider apple butter, honey and cinnamon to top off my muffins. These are great with or without the cream cheese topping.
I found these cute leaf sprinkles last autumn. I still had plenty left over from this recipe. Aren't they darling?

This is quite a festive muffin, perfect for apple season and fall. I like that you added flax seeds to the recipe.
Apple butter, flax seed...what a gorgeous looking cupcake!
What a lovely fall treat. I, like you, have recipes everywhere...and I always lose them! I'm glad that you were able to share this one with us because these muffins look too good not to try! Thank you for sharing!
I love adding flax see to whatever I can. This muffin needs to be in my life!
Thank goodness you found the recipe! I always jot down my recipes on little scraps of paper too. One of the best reasons for keeping my recipes on my blog is that I'll always be able to find them! These muffins look just gorgeous.
I am with you on everything you wrote here - recipe hoarder, constantly misplacing scraps with quickly written recipes, and apple butter fanatic. I cannot wait to try these muffins. So perfect for the season but won't leave me with a muffin 'hangover' as so many do. Now I just need some buttermilk...
I'm totally guilty of hoarding recipes. I'm glad you found this one, because these little guys sound tasty!
muffins muffins...!
i am ALWAYS for muffins!!
these look awesome...!
Hi!
I have recipes that I KNOW I won't prepare... but I keep telling myself... " I'll make it sometime... But " sometime " just isn't here yet " ;-)
I actually have a notebook that is titled... " RECIPES TO TRY "
Your muffins look good!
Susan
I am actually a terrible recipe hoarder and now that I have gastroparesis I hardly ever cook!
These muffins look great.
Hugs & love,
Mimi
I love your muffins, you always add so many ingredients into them! This is another wonderful looking muffin. I actually file my printout recipes in a file for easy reference:D
Yes! I am definitely a recipe hoarder. And they sit in my drawer untried :( But you constantly inspire me to try new things. I love this recipe. Maybe it won't stay in the drawer so long ;)
I love this kind of seasonal recipe, simple yet so full of crisp, spicy autumn flavors! Perfect! And cider apple butter? Wow! Great recipe. Want to nab this one!
Perfect for the changing weather here where I live. The flavors would fit in perfectly. Love the apple butter frosting. Wow!
I love apple butter. And pumpkin butter. And pear butter. And butter butter.
These muffins looks so delicious, especially with the leaf sprinkles!
I'm so glad you found the recipe!
I had to laugh at the splattered paper! I have a huge binder for my recipes and I still end up with recipes everywhere...written down on scraps of paper....some written in crayon. These look amazing! Yum!
I'm the same way. I usually write recipe ideas on little post-its they end up being in a pile on my desk until it gets out of control. Now I have a box full of them. LOL.
Delicious muffins!! A good way to get into the fall spirit.
These look and sound really yummy-Love apple butter!! Yes I'm a total recipe hoarder too!!
What a grand way to use appple butter. Love the flavors - the inclusion of the golden flax and oh yes - isn't everyone a recipe hoarder?
Oh Kim, you seem like you are becoming a healthy baking maestro....maestra?! Something to this effect (smile). These look really delicious, and they are so cute too.
p.s. thanks for your sweet comment on my veg post. It was hard to write it knowing that a lot of people just don't want to hear it;) Your responsible omnivore support means a lot!
Yummmmm...I just made apple butter the other day....this is soooo much fun! I am sooooo going to make these. Thanks once again. xoxox
Ha! Thought I was the only one with a tidal wave of paper all over the kitchen! I really need to find a way to get organized - family members have bought me folders and cute boxes and all to no avail! Luv the muffins!
I've lost so many recipes by writing them down so now I just type up my post as I cook. The muffins look AMAZING! I love everything about them.
Oh yes. Scraps of paper with recipes litter my kitchen! I'm always losing them :-)
Yes, your muffins ARE darling. And they look like they are nice, and moist, and have great flavor! I am becoming a recipe hoarder as well, that's why I am posting other bloggers' recipes so I can clear out my bookmarked stuff and make room for more! Speaking of which, I will be posting something of yours soon! ;)
this looks so cute:) thank you for sharing this.
The same thing happens to me with recipes! I keep saying I'm going to organize them...but it never happens. The sprinkles are darling! And so are the muffins - imagining all those flavors has my mouth watering!
These look so yummy! I love the topping, I think that frosting looks like the best part - actually, I bet that would be great on carrot cake too. Yum!
Oh my am I ever a recipe hoarder. I have those same papers floating around my house. Your muffins looks scrumptious!
These sound so delicious! I LOVE apple butter as well... as well you know. Cream cheese frosting is perfect, too. Oh, by the way, you might try a sticky note pad and cover your kitchen with sticky note recipes. Think so?
Yummy little muffins, I'm so glad you found your scrape of paper. I have the same problem with recipes, but once they make it on the blog I think they are in a safe place.
Mimi
Those look wonderful! I bet the house smells divine while they bake. About the little scraps of paper - I used to do that too! Now, I keep a calendar with plenty of space to write each day. As I create a recipe, I write the recipe in the calendar book. Much easier to find than my little scraps of paper.
Like this photo. I am still learning how to photograph food. There is more of a technique to it than I first thought. Great meeting you recently.
