cider apple butter muffins

I panicked this evening as I sat down to put this post together. A couple of days ago I jotted down this muffin recipe on a piece of scratch paper as I was measuring, mixing, baking and savoring and today as I went to grab that batter splattered scrap of paper I couldn't find it anyplace. I have so many pieces of paper sitting around my kitchen with hand written recipes and recipes printed up from other blogs and websites. Hello, my name is Kim and I'm a recipe hoarder. Oh, I feel much better now. They say admitting you have a problem is the first step. Anyway, finally I spotted that little scrap. Whew!

This recipe started with a little jar of cider apple butter! I just love apple butter. It's a perfect blend of apples, sugar and spice. It's so very nice!

I also used whole wheat pastry flour, grated apple, buttermilk, cinnamon, nutmeg, cloves, fresh ginger, and ground golden flax. They are so moist, lovely and full of autumn goodness.

I whipped up some cream cheese, cider apple butter, honey and cinnamon to top off my muffins. These are great with or without the cream cheese topping.

I found these cute leaf sprinkles last autumn. I still had plenty left over from this recipe. Aren't they darling?

Cider Apple Butter Muffins
by theUngourmet

yields 12 muffins

1/1/4 cup whole wheat pastry flour
1/4 ground golden flax
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
1 tsp fresh grated ginger
1 medium granny smith apple, peeled and grated
1 large egg
1/3 cup evaporated cane sugar
1/3 cup canola oil
1/2 cup cider apple butter
1/2 cup low fat buttermilk

Preheat oven to 350 degrees. Line a muffin pan with paper liner. Lightly spray oil liners.
In a medium bowl, whisk together the flour, flax, baking soda, salt, cinnamon, nutmeg and cloves. In a large bowl, whisk together the ginger, apple, egg, sugar, cider apple butter and buttermilk. Add the flour mixture to the egg mixture and stir just until combined.

Fill liners 3/4 full and bake for 16-18 minutes until toothpick inserted into center comes out clean. Cool on a wire rack.

Top with apple butter cream cheese topping if desired.

Apple Butter Cream Cheese Topping
5 oz cream cheese, softened
1/4 cup cider apple butter
2 tsp honey
1/2 tsp cinnamon

Whisk together ingredients until smooth and creamy.

Thank goodness you found the recipe! I always jot down my recipes on little scraps of paper too. One of the best reasons for keeping my recipes on my blog is that I'll always be able to find them! These muffins look just gorgeous.

I am with you on everything you wrote here - recipe hoarder, constantly misplacing scraps with quickly written recipes, and apple butter fanatic. I cannot wait to try these muffins. So perfect for the season but won't leave me with a muffin 'hangover' as so many do. Now I just need some buttermilk...

I had to laugh at the splattered paper! I have a huge binder for my recipes and I still end up with recipes everywhere...written down on scraps of paper....some written in crayon. These look amazing! Yum!

I'm the same way. I usually write recipe ideas on little post-its they end up being in a pile on my desk until it gets out of control. Now I have a box full of them. LOL.

Ha! Thought I was the only one with a tidal wave of paper all over the kitchen! I really need to find a way to get organized - family members have bought me folders and cute boxes and all to no avail! Luv the muffins!

Those look wonderful! I bet the house smells divine while they bake. About the little scraps of paper - I used to do that too! Now, I keep a calendar with plenty of space to write each day. As I create a recipe, I write the recipe in the calendar book. Much easier to find than my little scraps of paper.
