Blackberry Muesli Muffins...and another giveaway

I've been itching to whip up a batch of warm and hearty muffins for a while now. With school starting up again in a few days, I figured this would be the perfect time to add some new favorites to our list. As some of you know, I've been playing around with natural sugar alternatives lately. This muffin recipe calls for Xagave premium blend agave nectar in place of sugar.

Recently, I received a sample of Xagave along with a fabulous cookbook containing delicious recipes including Breakfast, Fruit Jams, Breads, Salads, Quick and Easy Gourmet meals, Sauces, Healthy Desserts, Beverages...and much more. I found a muffin recipe inside that called for rolled oats and blueberries. I had blackberries and muesli on hand so I tweaked things a bit. The end result is quite fabulous. These have a hearty wholesome texture and just the right amount of sweetness. The best part is that my kids are loving them as well so they are definitely going on our busy morning muffin list.

Blackberry Muesli Muffins
by theUngourmet -inspired by a recipe from the Xagave cookbook

Wet ingredients
1 cup Xagave
3 eggs
1 cup plain low fat yogurt
2 tbsp canola oil
2 tsp vanilla extract

Dry ingredients
1 cup whole wheat pastry flour
3 cups of muesli
1/2 cup rolled oats
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon

1 cup fresh blackberries

Preheat oven to 325 degrees. Grease 18 muffins cups.

Whisk together the wet ingredients in a large bowl. Mix the dry ingredients in a separate bowl. Add the dry ingredients to the wet ingredients and stir just until combined. Gently fold in the blackberries. Fill each muffin tin to the top and bake for 18-20 minutes or until toothpick inserted into center comes out clean.

I asked the fine people at Xagave if I could give one of my readers a package like the one I received and they said Sure Thing. Hurray!!

Hey Kim, your muffins look wonderful. Especially since they were made without the crystaline structure of any sugar (regular sugar, xylitol, etc.) That's amazing...!
