vanilla cabinets with fresh fruit

I learned something new the other day. I learned that in Rhode Island a flavored ice cream milk shake with flavored syrup is called a cabinet. Interesting. I did a search and couldn't find out any history on this. Does anyone know where this term comes from? I'd love to find out!

I found this vanilla cabinet recipe on Martha's website. We had these after our BBQ on the 4th. They are super easy and look so very festive!

I made strawberry and blueberry. You can also make cherry and raspberry if you like.

Things are really supposed to heat up around here for the remainder of the week so I think I'd better whip these up again!

Vanilla Cabinets with Fresh Fruit
adapted from Martha Stewart Living

4 cups of strawberries, quartered
4 cups of blueberries
2 tbsp lemon juice
1/4 cup agave nectar
2 qts fat free vanilla frozen yogurt
1/2 cup half and half
2 tsp pure vanilla extract

In a medium sauce pan, combine 1 tbsp of lemon juice, 1/2 of the agave nectar and the strawberries. In another medium saucepan, combine 1 tbsp of lemon juice, the other 1/2 of agave nectar and the blueberries. Cook over medium heat, stirring occasionally, until berries release their juice, about 10 minutes. Transfer the strawberries and blueberries into separate bowls and cool in the fridge.

In a large bowl, whisk the frozen yogurt, half and half and vanilla until creamy. Spoon 1/4 cup of either fruit into the bottom of a glass. Top with milk shake. Repeat with remaining fruit and milk shake. Garnish with fresh fruit. Serve immediately.

Hmmm, it would be intersting to know where the name comes from. They do sound delicious no matter hwere the name comes from.

When ice cream is added, Coffee Milk is called a “Coffee Cabinet” or “Coffee Cab.” In other words, a “cabinet” is a local term for a “frappe” which is a regional term for an ice cream milk shake. It is though to be called a “cabinet” because it unknown originator kept his blender in a kitchen cabinet. Also mixers were often stored in square wooden cabinets.

This is what I found- refers to the blender its made it, and originated in Rhode Island as well- a local usage...

Also, I have seen upscale bars and restaurants have reverted back to the use of mason jars- even in NYC, Brooklyn area!

I am from the Midwest so I have never heard of this "cabinet" thing... but they look utterly delicious. I tried to look it up in Wikipedia but came up empty handed. Weird that there would be no history about it!

First of all, those look delicious! It has been unGodly hot here and plain old ice cream is not cutting it. These would work, I believe! Yum!

Those are beautiful! I spent much of my childhood in RI but have no idea why they are called cabinets. I'll have to ask my Mom! However, I do have another tidbit for you... in RI be careful when ordering coffee with milk. A "coffee milk" is a drink made with cold milk and coffee syrup (like chocolate syrup for chocolate milk).
