I was hunting around for something to stick the last of my pistachios into and I stumbled onto 101 Cookbooks and this scrumptious nut butter. I just couldn't pass up trying the recipe.
The only nut butter I can recall making is peanut butter, which is technically not a nut at all so...I guess this is truly my first nut butter.
I love pistachios! The almonds and pistachios together are a nice combination. I chose to use roasted nuts in my nut butter for a bolder flavor. I also threw some agave nectar and a bit of salt.
The sweet and salty mix was terrific. We tried some of this yummy nut butter on crackers. Delicious!
Sweet n' Salty Pistachio Almond Butter
adapted from 101 Cookbooks
1 cup shelled dry roasted pistachios
1 cup shelled dry roasted almonds
about 1/2 cup hot water
1/4 cup agave nectar
1/4 tsp salt
Using a food processor, mix the nuts until finely ground. Slowly add the hot water to reach desired consistency. Mix in the agave nectar and salt.
Serve however you please! :D

How, after reading 101 cookbooks avidly for over a year, could I have missed this! Amazing.
The nutty butter sounds really wonderful! And how I love pistachio in a butter!
Yikes...A must have! Always on the hunt for a new nut-butter:)
Oh my! This sounds heavenly!!!! Lori
It looks so good!!!!
Sounds like a great use of pistachio! I've yet to try making nut butter from scratch.
This is why I love homemade nut butters. They are not only cheaper but you can truly get creative. I don't think they jar pistachio almond butters and clearly it's an amazing combo! Can't wait to try it :)
Sounds absolutely divine! Can't wait to try it!
My very regular almond butter sounds boring next to your vamped up creation. I love using agave nectar...and this recipe will have to be made very soon.
Thanks for sharing this treat,
Claudia
What a delicious nut butter! Pistachios are one of my absolute favorite nuts. Next time I pick some up I'm going to give this a try! :)

So how many jars do you have, I need one of them sent to me STAT!
Thanks Kim! Do let me know what you think :) And the nuts butter is yum..Pistachios are my favorite nuts..
oh wow! this is right up my alley.. i'm gonna hafta con someone into making this for me...
.. or i suppose i could just do it myself... lol
I love pistachios too! This is so easy to prepare. Bet they make a good filling for empanadas too!
I have a confession to make. I hate peanut butter. And I hate because I'm a fake American, born and raised in another country. But I bet my boyfriend, who's a "real" one, would love this... so maybe I'll make it for him to surprise him with a little taste of home when he gets here in Europe in August. Thanks for the recipe!
This is the easiest recipe I've ever seen. My food processor will be dancing with joy at the prospect of getting used again! ;)
great butter and super easy...i swwon that blog but have not seen this, thanks for sharing..first pioneer and now 101, great picks

Hey Kim, I can understand why you couldn't pass up this recipe for a mixed nut butter-it's so simple & at least seems easy! Sounds delicious too...
p.s. I've never made tofu quiche with a box of tofu labeled 'firm'. However, my friend says the 'extra firm' I buy is like her brand's 'firm'. So you know...
My recipe calls for 1 1/2 blocks of tofu, but you could scale it down and do it your own way. I think a couple tbsp. of this nut butter in there sounds wonderful!
Have a good night, Kim. Stella
Wow, that looks amazing. Its got my name written all over it. Actually... are you sure thats not mine ;)????
*kisses* HH
I do love nut butters and pistachios may be my favorite - utterly scrumptious.
What a delicious nut butter! Pistachio is so seldom used this way. I love the combo!
I haven't been here for a bit - wow - does the blog ever look nice!!! Good job. I think I have to try the nut butter - it sounds and looks really interesting.
this sounds fabulous! I'll have to pick up some pistachio's so I can make some too :)
