p-dub's strawberry shortcake cake

I worked with Cathy at the Saturday market this past week and picked up some more luscious Oregon strawberries. This time I picked up double so that after munching I'd still have enough to put into a recipe. I wanted to make something really fun. After searching my cookbooks and the web, I still couldn't find just the right thing. I decided to hop over and visit Ree, the Pioneer Woman, and sure enough she had the most wonderful Strawberry Shortcake Cake over there. Don't you just love Ree?!

I don't recall ever cutting a cake in half so I was a little bit nervous it would crumble, but it held together just fine. Whew! The recipe calls for quite a bit of butter. I felt a little like Julia using 3 sticks of butter (cake and frosting) in my recipe.

I thought it came out so pretty! Just look at those yummy strawberry layers!

I used a nine inch round pan instead of Ree's 8 inch. I could have reduced the baking time by a few minutes. The cake was a tad darker than I would have liked but other than that, it was fantastic! I think this would be a wonderful 4th of July cake, don't you?!

This cake is the perfect way to use up 3 sticks of butter;-) I have always wanted to make this one. What a beauty it is!!

"Butter makes everything better,"...says the woman who made rice krispy treats yesterday. Sure they weren't nearly as AMAZING looking as that cake, but they did make good use out of half-a-stick of butter.

The best part of strawberry shortcake is the cake that's soaked up all the yummy strawberry juices. And wrapping it all up in cream cheese frosting is brilliant.

Hey Kim, this looks so delicious. I know it is too, b/c I made a pretty similar cake with black berries and it was amazing. I think this looks even better. Yum!
