pb chocolate chip granola bars

I mentioned the other day that I would be making some granola bars. With the end of the school year rapidly approaching, things have been a bit hectic. I'm sure a lot of you can identify! Repeat after me. Summer is almost here...Summer is almost here... ;D

I can't recall ever making granola bars. I've made gran-o-la but I can't recall ever pressing it into a baking dish to form fabulous little bars. Until now. These were so chewy, crispy, nutty, sweet and best of all, packed with nutritious goodness!

See my kids on the ground in the photo above? They are waiting for rain so they can make an outline of their bodies. I asked them where in the heck they came up with this idea. They told me that there is an artist that does this. Have you heard of him?

I found a recipe over at Salba Smart but really wanted chocolate chips and peanut butter instead of dried fruit so that's just the way I did it.

PB Chocolate Chip Granola Bars
by the Ungourmet -inspired by Salba Smart

3/4 cup creamy (the kind you stir) peanut butter or other nut butter
1/2 cup plus 2 tbsp honey
3 cups rolled oats
2 cups crispy rice cereal
1/2 cup roasted unsalted sunflower seeds
2 tbsp golden flax seeds
2 tbsp Salba seed (optional)
1 cup shredded sweetened coconut
1 cup semi sweet chocolate chips
2 tsp ground cinnamon
2 tsp vanilla extract
2 large eggs

Preheat oven to 325. Spray oil a 13 x 9 inch baking dish. In a small pan heat the pb and honey over low heat until melted, stirring often. Cool. In a large bowl mix the oats, cereal, seeds, coconut, chips, cinnamon and vanilla. Gently stir in pb mixture and coat evenly. Slowly mix in the eggs. Using your hands, gently mix everything until evenly coated. Press into prepared pan to form an even layer. Bake for 20-30 minutes until edges are lightly browned. Cool completely in the pan prior to cutting into squares.

My kids LOVED these! I was happy to know that they were enjoying a snack that was so good for them.

mmmm....delicious! I just went to the store yesterday and picked up flax, almonds, oats and dried cherries to make granola with! But maybe I'll have to make one batch of granola and another of these..

Your kids are so funny. I couldn't stop laughing at their idea. I guess it's kind of like snow angels right?

Those granola bars looks scrumptious. Way better than Quaker's.

I've tried making granola bars but they fell apart for some reason. This recipe sounds delicious and so healthy. I'll give it another try.

ha, love your blog design btw! I just made my own granola bars last night! I resisted added choc. chips and added pumpkin seeds over sunflower. I think I made a mistake. The pumpkin seeds were slightly too bitter. These look yummy!

That's too funny how your kids were waiting for rain to make an outline of their bodies -- that sounds like something I would have done as a kid! :) The granola bars look delicious...peanut butter and chocolate is irresistible!

Hey Kim, these look delicious. I make my own granola, so I know how truly wonderful homemade granola and bars can be. I also know how hard it is to convey in a blog post. I mean, it's not filet mignon with mash potatoes, but somehow it is!
p.s. I normally don't talk about my food on other people's blogs, as it's their time. But I hope you try the tofu wontons. They are unbelievable yum.

Your kids are too funny! I never heard of the artist before. I love the idea. And your bars are look awesome! I stopped eating the store-bought ones - they are so full of junk. I need to try my hand at these.
