Rhubarb Streusel Bread

I remember eating rhubarb once when I was a kid. If memory serves me, it was inside a strawberry rhubarb pie. I must not have taken a liking to it because don't recall ever touching those deep red celery-like stalks again. Until now.

I was helping a friend of mine at her farmer's market booth a couple of Saturdays ago and had a chance to do a bit of quick shopping before I left for the day. I have been wanting to give rhubarb another try so when I spotted a basketful at one of the booths, I grabbed a couple stalks.

Then I did a bit of hunting online and found this yummy Land O' Lakes Rhubarb Streusel Bread Recipe.

I love this bread! The rhubarb is tangy, the cinnamon streusel topping is cinnamon-y-good. It's moist and delicious and not overly sweet. I think it's a perfect breakfast bread.

The only change I made to the recipe was the use of Bob's Whole Wheat Pastry Flour instead of all purpose flour. Oh, and I didn't use the Land O' Lakes butter or eggs either.

Looks great, a bit like a loaf version of the muffins I made a few weeks ago, they had cinnamon sugar topping too. Glad you have rediscovered rhubarb, I rediscover it every year!

When you live in MN, you learn to love rhubarb. Makes a great compote for pork, the best baked goods (as evidenced by your scrumptious breads). It returns fathfully year and after year and is cheap! Kind of pretty in its own way,too)

I grew up eating rhubarb often. Then when I grew older, it was even presented to me in the form of rhubarb wine or as it was called locally in our German community, Piestengel. I do prefer the rhubard coming out of the oven.

I don't I ever had rhubarb until I picked it up myself at the Farmer's Market last year! And now I'm in love. I am so going to have to make this streusel bread...it looks delicious!

I remember sitting in my neighbours rhubarb patch with a bowl of sugar in one hand and stalks of rhubarb in the other. That means I would love this streusel!

I adore rhubarb! I grew up eating it through late spring and early summer and then freezing it for later. I miss having rhubarb growing in my yard. It's kind of expensive here.

I'm not a fanatic of Rhubarb in general. I did love seeing it grow in my Nonno's garden as a child. The redness in the stem used to make me smile.
I do like your recipe for streusel bread...therefore, I might make just a tiny fruit selection adjustment. Hope you don't mind too much.
