mini key lime cheesecakes

I spotted key limes at the grocery store the other day and I thought, "Hey, I've never made key lime cheesecake before, I should give it a try!".

I brought my limes home and began the process. After squeezing a pound of these little suckers, my hand was just a tad cramped and sore. Next time I think I'll just buy key lime juice.

I also discovered while mixing up the ingredients that I was out of confectioners' sugar. My son and I quickly jumped in the car and headed back to the store. Ugh! Has this ever happened to you?

I loved these but I think they could have used more lime juice. The zest on top helped bring out a bit more punch but next time I'll use more of the juice.

I went with the same mini cheesecake recipe that I used for my husband's birthday. The only change was the addition of 1/4 cup lime juice and 2 tbsp lime zest.

I upped the baking time to 35 minutes. They seemed to take a little longer. Maybe it was because of the increase in liquid. Anyway, they turned out pretty darn good overall.

One of my friends in college made a key lime cheesecake once. But his version was mostly sour cream and very little sugar. Suffice it to say - not my favorite (sorry Tim!). These do look quite delicious and in principal I would LOVE key lime cheesecake. So pretty.

Adorable! Absolutely adorable. I've never made anythign with key limes before, but I would definitely try to make these.

I hate when I don't have ingredients I need at home. I've gotten really good at thoroughly reading through my recipes before I start working on them, so I usually don't run out of stuff mid-recipe anymore. But I'm still disappointed when I'm home and really want to make a particular thing but am missing one or two ingredients for it.

I remember making something similar last year, but with a cookie crust. I'm craving for cheesecake all of the sudden. I hope you saved me one or two. :)

Not having an ingredient happens a little too often for my liking in the MTBT household. This cheesecake certainly came together well!!!

They look wonderufl. I especially like them because they are mini version. We don't get key limes here, just regular lime (and it certainly travels a lot to get here anyway.

WOW these key lime cheesecakes sound and look so yummie!! They are so beautiful and cute! I would love to try to make this coz lime is one of my favorite and it goes really well with cheese! Im not so confident in my baking skills and worry i might make a mess out of this. Hopefully i could pull myself together and give this recipe a go! It's always such job and fun visiting you here! I need to go grocery shopping with you, if for no other reason than to experience the brilliance of thoughts like, "Hey, I've never made key lime cheesecake before, I should give it a try!"

Because farthest I get in culinary creativity when I see limes is, "Do we have enough limes left for the rest of the beer?"

And your key lime cheesecakes look way better than any beer.

I picked up a bag of key limes at the grocery story and promptly put it right back down when I pictured squeezing those little things. Your little cheesecakes sure do look good. I'll look for the bottled juice too.

So cute, I love key limes but you can be there FOREVER and my hand always cramps too, haha I haven't made much except for the key lime and pepita cake, but these look so tasty, I like that you added the lime zest on the top- to add the extra punch of flavor

Those are gorgeous! What beautiful pictures. I know what you mean about squeezing the limes. The last two or three key lime recipes that I have made, I've just purchased the juice.

I love that these are mini cakes vs. a great big giant cheesecake. So pretty. I'm thinking that I might need to use this one for a shower that I'll be throwing in the next few months.

These look good! I have never made Key Lime Cheesecake because it is my friend's specialty. Hers is a brighter green and a real treat in summer.

I am always running out of something. I think I used to be more organized.
