Did you all have a nice Mother's Day? I hope so. Mine was very nice. My daughter made me a card that said Happy Mother's Day in Chinese and drew me a lovely flower picture. My son painted me a card with water colors and made me a beautiful purple soap with roses on it. Handmade gifts are the best kind!
We went to my husband's parents house to celebrate Mother's Day as well as my Mother-in-Law's birthday.
I was thinking of bringing a fruit salad over but then I remembered this shortcake recipe. I haven't made these since last summer.
I just love the pop of lemon and the crunch of raw sugar sprinkled over the top.
You can, of course, use any mix of berries you like. I thought the strawberries and blackberries were a nice combination.
This window is hanging on my in-laws fence. I always love photos of doors and windows for some reason. Hmm. What does this mean? ;)
Lemon Shortcakes with Mixed Berries
adapted from Better Homes and Gardens
Serves about 8
Print recipe
1 cup whole wheat pastry flour
1/2 cup all purpose flour
2 tbsp sugar
1 1/2 tsp baking powder
pinch of salt
1/3 cup cold butter, cut into cubes
1 egg, slightly beaten
1/3 cup half and half
2 tsp, lemon zest (I forgot this but trust me, you will want to include it.)
1 tsp lemon extract
1 egg white, slightly beaten
raw sugar for sprinkling
Preheat oven to 450 degrees.
In a large bowl whisk together the flour, sugar, baking powder and salt. Cut in the butter until it resembles large crumbs. In a smaller bowl combine the first egg, half and half, lemon zest and lemon extract. Add the egg mixture to the flour mixture and stir just until combined.
Turn dough out onto a well floured board and roll to 1/2 inch thickness. Using a glass or biscuit cutter, cut out approximately 8 shortcakes. Place onto a baking sheet. Brush with egg white and sprinkle with raw sugar. Bake for 8-10 minutes until golden.
Serve with your choice of berries and fresh whipping cream.
Note: I tossed my berries with a little confectioners' sugar and some lemon juice.

Homemade gifts from our kids are always the best. As I sit here at my desk I have two items made by my own daughter to remind me of the little girl who is now a woman. My daughter also loves strawberry shortcake.

A group of us were just talking about how we ate strawberry short cake growing up, on those 'fake' indented sponge cakes...why did our mom's not make these wonderful cakes like yours??? My mom was the baker, but I guess she got lazy now and then, like we all do...

That's funny! I love doors and windows, too. When we went to Greece, I took a TON of pictures of windows and doors, which completely baffled my husband.
