zucchini and feta muffins

I'm so glad I didn't have to take any outdoor blog photos today. It was nuts out there! 35-40 mph wind gusts, pelting rain, a dash of hail.... So crazy! I guess we have to do a little making up for our mild winter. Luckily, I made these the day before Easter and the weather was a bit more cooperative that day.

These are a savory muffin and are a little biscuit-like. Not only do they have zucchini and feta, they also have some wonderful lemon zest that brings a nice spring feel to them. I really loved these but my husband complained that everything I made for brunch had lemon in it. I explained to him, ever so lovingly, that it is springtime and lemon tastes like springtime. It makes things taste like sunshine. That silly man, he just doesn't know anything about spring! ;0)

zucchini & feta muffins
recipe adapted from 500 muffins

Print recipe

1 cup whole wheat pastry flour
1 cup all purpose flour
1 tbsp baking powder
pinch of salt
2 eggs
1/2 cup extra virgin olive oil
1 1/2 cups shredded zucchini
1 cup crumbled feta cheese
1 1/2 tbsp grated lemon zest

Preheat oven to 350 degrees. Grease 12 muffin cups.

In a medium bowl, whisk together the dry ingredients. In a large bowl, whisk the oil and egg until smooth. Stir in the zucchini, feta, and lemon zest. Add the dry ingredients and stir just until combined. Spoon the mixture evenly into prepared muffins cups. Bake for 20-25 minutes or until nicely browned. Remove from pan and allow to cool on a wire rack.

Yum yum yum!! I'm not a huge fan of sweet muffins but I ADORE savoury muffins - and these look absolutely sublime (and ideal to eat the WHOLE year round). I also add lemon juice to just about everything...

My dad would have been saying the same thing - he HATES lemon. I don't know what's wrong with him.

"It makes things taste like sunshine" - I'm so using that line! My boyfriend claims not to like any lemon desserts, baked goods, etc. These muffins look amazing to me and probably brought a whole lot of sunshine to the awful weather day you described.
