I'm dreaming. Dreaming of warm breezes, white sandy beaches, turquoise water, palm trees, a nice refreshing beverage with a little umbrella in it, a comfortable hammock and luscious tropical fruits! Well, the first six things just aren't going to happen any time soon but the tropical fruit...now that, I can do.
These little upside-down cupcakes are overflowing with tropical fruit!
I threw a couple of bananas and some coconut milk into my cupcake batter too.
So moist and so yummy!
And with all of the tropical fruit...it's almost a good as a tropical vacation! Almost.
coconut mango & pineapple upside-down cupcakes

makes about 2 dozen
Print recipe
3 tbsp almond meal
1/2 cup shredded sweetened coconut
1 1/2 cups of confectioners' sugar, sifted
1 1/2 cups whole wheat pastry flour
1 tsp baking powder
1/2 cup butter, melted
4 eggs
2 medium sized ripe bananas, mashed
1/2 cup light coconut milk
1/2 tsp coconut extract
1 cup chopped mango
1 cup chopped pineapple
3 tbsp butter, melted
brown sugar
Preheat oven to 350 degrees. Lightly grease 24 muffin cups.
In a medium bowl combine the almond meal, coconut, confectioners' sugar, flour and baking powder. In a large bowl whisk the butter, banana, coconut milk and coconut extract. Add the flour mixture to the egg mixture and whisk to combine.
Place 1 tsp of brown sugar in the bottom of each muffin cup. Add about a tbsp of so of mango and pineapple over the brown sugar. Evenly drizzle the butter over the fruit.
Evenly divide batter between 24 muffin cups. Place in the oven and bake for 18-20 minutes. Remove pans from oven and allow cupcakes to cool for 5 minutes in the pans. Place the cooling rack over muffin pan and invert to release the cupcakes onto the rack. Allow to cool on rack.
Note: The almond meal and confectioners' sugar in this recipe were inspired by a recipe I found in 500 cupcakes. This was my first time using confectioners' sugar in a cake mix. I really love how they turned out so I will definitely use this sugar again.

I just had a piece of pineapple saturday at a food blog gathering, and I am not suppose to eat it due to the acidic affects on my kidney's, but this screams goodness, so to heck with my urologist! I am making these...

Yum, yum and yum again. You supply a couple of these delightful cakes and I will provide teh drink with the umbrella.
I stared at these for a good long while wondering how I could twist it up a bit and I couldnt come up with anything except a dollop of whipped cream, buttery and rich whipped cream...I love individual desserts!
Perfection! I've never thought to put fruit (or anything, for that matter) in the tins before pouring on the batter. Mmmmmmm...

These make really gorgeous little cakes! It's fun when something that tastes great looks pretty too. The flavors sound amazing. The only taste of the tropics that is missing is a splash of rum.
I think this one is better alternative to a Tarte Tatin. Im not a tart fan, so this cake will work better for me. Love the combination of three tropical fruits.... U
