The cool and rainy weather here has got me craving a piping hot bowl of soup and some nice crusty bread! As some of you know, my husband is a bit of a soup hater. For some reason though, he doesn't furrow his brow too terribly much when I make chowder. So...chowder it is.
I spotted this fantastic rosemary bread while I was at Trader Joe's today and thought it would be perfect along side the chowder.
Potato Corn and White Bean Chowder

Serves 4-6
Print recipe
1 cup of small white beans, soaked and cooked until tender
4 pieces of turkey bacon, chopped and cooked crisp
1 tbsp butter
2 cloves of minced garlic
4 cups chicken stock
1 1/2 cups half and half or whole milk
3 large potatoes, peeled and diced
1 cup frozen corn
1 tsp crushed dried rosemary
1 tsp dried thyme
1 tbsp dried parsley
salt and cracked pepper to taste
Saute the garlic in the butter for a minute or so. Add the remaining ingredients. Stir to combine. Bring to a slow boil. Reduce heat and simmer until potatoes are tender. Using an immersion blender, mix soup for a minute or two to thicken slightly.
Serve with a warm crusty bread.
This sure did hit the spot!

There's just something extra hearty about chowder...I don't think anyone could resist! Especially not when served with that lovely rosemary bread...maybe THAT is what I need to try to accomplish next!

Looks awesome from here. I'm not much of a soup fan myself, but I've always put chowder more towards the "stew" end of the soup-stew spectrum. Seeing as how it's all thick and stuff.

My husband is the same way - one of the first meals I made my husband was homemade chicken noodle soup with homemade stock and homemade crusty bread with herbed butter.
He loved it! I cleared the dishes, came back into the living room and asked for the remote to see if there was a movie we wanted to rent. He took one look at me and said "what's for dinner?" I told him it was the soup and bread!
It was then that I realized a side of meat was required at all meals!
