Since St. Patrick's Day is just around the corner I thought a nice Irish Stew was in order. I was pressed for time so I decided to put a twist on things.
I put together lamb meatballs for my stew instead of stew meat. I thought this would cut down on the simmer time.
Simply Recipes has an Irish stew with Guinness and red wine. I thought this was a grand idea!
I really love the way this came out. I will most definitely make it again.
My husband even gave a big thumbs up! Yay!
These cheddar biscuits call for Kerrygold Irish Butter Kerrygold Vintage Irish Cheddar. Fantastic!!

So funny - I just made the simply recipes stew too but with beef instead of lamb. I loved it!
Those biscuits are such a nice touch. The whole meal looks scrumptious. I would love it if you submitted it to Regional Recipes: Ireland! (but no pressure if you don't want to :D)
Oh this looks hearty and delicious, love the biscuits on the side too.
Great job,
xoxo
Stew would be perfect on St. Patrick's Day. I'm definitely making those yummy cheddar her biscuits though. Mmmmm...
the stew and the biscuits look perfect!
Mmm, warms my Irish heart. :)
this is so coincidental because as I was reading it the morning news program had the cooking guy on and guess what he was making - well not the biscuits but he did make the stew - is this a sign from above?
Ooooh, my Irish-European-Mutt eyes are smiling! I think I could probably kill a half dozen of those muffins in one sitting.
The stew with meatballs is such a terrific idea! Very yummy and the cheddar herb biscuits is a great addition to this meal!
Kim, this was a wonderful post. Your stew and biscuits are both screaming "try me". I think I will. I love the idea of using meatballs in the stew.
Hi Kim. This looks beautiful like all of your stuff. I wish I knew how you take such fabulous photos. Probably TALENT! any hoo, just poppin in to see what's cooking with you. Plenty. Hope all's well, take care, Keri (a.k.a. Sam) Ohh and I'm doing these biscuits for sure.

I just got back from the grocery store and buying all of my supplies for Wed! I think I have to go back now because I HAVE to have those biscuits :) Yum, yum!
Nice idea with the meatballs and I love the look of the biscuits.
Kim, what a nice stew...with lamb meatballs and sure a great match with the cheddar biscuit...great looking meal :-)
This is perfect! My hubs love Guinness stew too.
Happy St. Paddy's Day to you too, Kim! Lamb meatballs sound like an incredible variation to Irish Stew...and those biscuits are mouth-watering!
The stew and the biscuits both look delicious. I brought some Kerrygold Cheddar and Kerrygold Cheddar with stout to a party this weekend, and both cheeses were gone in no time. I bet those biscuits vanish pretty quickly too!
Beautiful meal...I did Irish Stew last year and now I'm back to corned beef.
I love, love, love the meatball stew! And the biscuits are the perfect side! Totally delicious!
I am currently amending my stew to put meatballs in it. The best idea - and by the looks of it - the most scrumptious. Love the cheddar muffins also and I do savor Irish cheddar!
Oh, yum! I love the idea of using meatballs in this stew. What a wonderful and savory St. Patrick's Day dish. Plus, the biscuits...they sound amazing. Good ideas all around!
Oh this sounds lovely. Of course the Irish love their beer, so they would even slip it into stew. And cheddar herb biscuits sound like the perfect complement! Maybe it can be a green-dyed for a festive touch. ;)
Lamb meatballs! Great idea. And I just couldn't stop looking at those scones. I wish I was your neighbor! :)
