Irish Stew with a Twist and Cheddar Herb Biscuits

Since St. Patrick's Day is just around the corner I thought a nice Irish Stew was in order. I was pressed for time so I decided to put a twist on things.

I put together lamb meatballs for my stew instead of stew meat. I thought this would cut down on the simmer time.

Simply Recipes has an Irish stew with Guinness and red wine. I thought this was a grand idea!

I really love the way this came out. I will most definitely make it again.

These cheddar biscuits call for Kerrygold Irish Butter Kerrygold Vintage Irish Cheddar. Fantastic!!

Irish Stew with Lamb Meatballs

For the meatballs
1 lb ground lamb
1/3 cup cracker crumbs
1 clove minced garlic
2 tbsp minced onion
1/2 tsp salt
cracked pepper
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 egg

Combine all ingredients and form into 10 equally sized meatballs

For the stew
1 tbsp extra virgin olive oil
2 cloves minced garlic
1/2 cup chopped onion
4 cups beef broth
1/2 cup stout beer (like Guinness)
1/2 dry red wine
1 tbsp Worcestershire
4 potatoes peeled and cut into 1/2" pieces
3 large carrots peeled and sliced into 1/2" pieces
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1/2 tsp salt
cracked pepper
10 lamb meatballs

In a large pot or Dutch oven, saute the garlic and onion in the olive oil for a minute or two. Add the broth, stout beer, wine, worcestershire, potatoes, carrots, herbs, salt and pepper. Bring to a nice simmer. Carefully add in the meatballs. Cover and simmer slowly for 30-40 minutes.

Cheddar Herb Biscuits

2 1/2 cups whole wheat pastry flour
1 tbsp sugar
1 tbsp baking powder
3/4 tsp cream of tartar
1/2 tsp salt
1/2 cup Kerrygold Irish Butter, cut into pieces
1 cup grated Kerrygold Vintage Cheddar
2 tbsp chopped herbs (I used parsley)
1 large egg
1 1/4 cups milk

Preheat the oven to 400 degrees. Spray oil 14 muffin tins. Set aside.
Whisk together the flour, sugar, baking powder, cream of tartar and salt. Cut in the butter. Stir in the cheese and herbs. Stir in the egg and milk.

Scoop dough evenly into muffin cups. Bake for 15-20 minutes until golden brown and toothpick inserted comes out clean.

These biscuits were so scrumptious! I have leftovers for breakfast in the morning. Oh yeah!!

So funny - I just made the simply recipes stew too but with beef instead of lamb. I loved it!

Those biscuits are such a nice touch. The whole meal looks scrumptious. I would love it if you submitted it to Regional Recipes: Ireland! (but no pressure if you don't want to :D)

this is so coincidental because as I was reading it the morning news program had the cooking guy on and guess what he was making - well not the biscuits but he did make the stew - is this a sign from above?

The stew and the biscuits both look delicious. I brought some Kerrygold Cheddar and Kerrygold Cheddar with stout to a party this weekend, and both cheeses were gone in no time. I bet those biscuits vanish pretty quickly too!

I am currently amending my stew to put meatballs in it. The best idea - and by the looks of it - the most scrumptious. Love the cheddar muffins also and I do savor Irish cheddar!

Oh this sounds lovely. Of course the Irish love their beer, so they would even slip it into stew. And cheddar herb biscuits sound like the perfect complement! Maybe it can be a green-dyed for a festive touch. ;)
