Chocolate Oatmeal Stout Muffins

I had one bottle of stout left in the fridge so I decided it would be great to use it in some muffins. I was actually inspired to make muffins after seeing this recipe over on Megan's delicious blog!

Chocolate and stout go together almost as nicely as peas and carrots!

These muffins also have a nice helping of whole wheat pastry flour, ground flax and oats.

And, of course, cocoa powder and some big, fat chunks of yummy chocolate!!

They are nice and crisp on the outside and moist and chocolaty on the inside. Mmm Mmm!

Chocolate Oatmeal Stout Muffins
by theUngourmet

makes about 16 muffins

Print

1 cup oats
1 1/4 cup whole wheat pastry flour
1/2 cup cocoa powder
1/3 cup ground golden flax
1 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 cup canola oil
1 cup stout beer
1 tsp vanilla
1 cup chocolate chunks

Spray oil 16 muffin cups

In a medium bowl, whisk together the oats, flour, cocoa powder, flax, sugar, baking powder, baking soda and salt. In a large bowl, whisk together the eggs, oil, stout beer and vanilla. Add the dry ingredients to the wet ingredients. Stir to combine. Fold in the chocolate chunks.

Bake at 375 for 16-18 minutes.

These are super good! Give 'em a try!!

I also wanted to throw in this cute shot of my boy at a recent field trip. We had lunch at the park and then took a trip to the Dept of Agriculture to look at lots and lots of bugs! Fun times!

Cute picture of your son! That sounds like a fun field trip. I'm loving that I get to chaperone field trips as a parent rather than a teacher these days.

I made these for breakfast! So I used coffee instead of stout. Which does sort of miss the whole point of your delicious recipe. But I couldn't bear the thought of opening a whole bottle of stout at 9 a.m. and having to throw the rest away... or let it get flat... or... drink it.

So coffee.
