I had one bottle of stout left in the fridge so I decided it would be great to use it in some muffins. I was actually inspired to make muffins after seeing this recipe over on Megan's delicious blog!
Chocolate and stout go together almost as nicely as peas and carrots!
These muffins also have a nice helping of whole wheat pastry flour, ground flax and oats.
And, of course, cocoa powder and some big, fat chunks of yummy chocolate!!
They are nice and crisp on the outside and moist and chocolaty on the inside. Mmm Mmm!

I also wanted to throw in this cute shot of my boy at a recent field trip. We had lunch at the park and then took a trip to the Dept of Agriculture to look at lots and lots of bugs! Fun times!
Hope you all had a nice St. Paddy's Day!

Cute picture of your son! That sounds like a fun field trip. I'm loving that I get to chaperone field trips as a parent rather than a teacher these days.

I think this is the first non-green Saint Pat's day recipe that I've found so far ;) it looks great!
I agree, chocoate and stout do go together as well as peas and carrots! :) Your muffins look so yummy! I hope you had a wonderful St. Paddy's Day, Kim!
Oh yes - so chocolatey, moist and rich. I could smell them. Love the photo of your son and the "bug" outing. He looks ready!
Wow, these look so moist and chocolatey! I've got to make it for my husband!
Those look like sturdy & delicious muffins! Oatmeal & Chocolate are good but Stout is genius. Yum!
You are amazing. Now this is a combination I don't think would immediately occur to me to try. But your photographs make these look so chocolatly how could I ever resist even the smallest nibble; I could not.
Your son is handsome!
Delish! I'll bet that's way better than peas and carrots :)
I made these for breakfast! So I used coffee instead of stout. Which does sort of miss the whole point of your delicious recipe. But I couldn't bear the thought of opening a whole bottle of stout at 9 a.m. and having to throw the rest away... or let it get flat... or... drink it.
So coffee.
But I wanted to let you know that I thought they were AMAZING. Thank you so much for sharing the recipe!

Whoa!! Now that's a cupcake for me. Another have to bake it. Just need to shake this flu that has descended upon our family for the oh third time this year... *sigh*
If only I had some of that stout left! These look amazing. Love the chocolate chunks in them. And I'm so happy my recipe inspired you!
