Valentine pancake squares

Since Valentine's Day falls on a Sunday this year I thought these pancakes would be a perfect breakfast for my sweet little family. Of course, I had to make them a day early to get them on here in time. That's alright, I'll just have to figure out some other Valentine-y treat for tomorrow.

I'm so addicted to pancake squares. They are so much faster to prepare than regular pancakes.

The strawberry slices on top are supposed to look like hearts but they sank just a bit.

These would be great with either maple or strawberry syrup.

Valentine Pancake Squares
by theUngourmet

2 cup whole wheat pastry flour
4 tsp baking powder
1/2 tsp salt
2 tbsp packed brown sugar
2 eggs
4 tbsp melted butter, cooled to room temperature
1 1/2 cups low fat buttermilk
1 1/2 tsp vanilla
sliced fresh strawberries

Preheat oven to 350. Grease a 13x9 baking pan.

In a large bowl whisk together the flour, baking powder, salt and brown sugar. In another bowl whisk together the eggs, butter, buttermilk and vanilla.

Add the egg mixture to the flour mixture. Stir to combine.

Pour into prepared baking pan. Carefully place strawberry slices on top of batter. Place into the oven and bake for 20-25 minutes.

Allow to cool for a few minutes before cutting. Serve with your choice of syrup.

Pancake squares...a great idea, Kim. This is so much easier than trying to make pancakes the old way. What a timesaver and everybody has a hot cake at the same time. Very smart.

Perfect breakfast treats. I just realized that the strawberries cut lengthwise do look like hearts. hahaha... That had never occured to me.

That is soooooo sweet. :) I am filing this away, because I know that tomorrow I am getting breakfast in bed (fruit salad and whole-grain toast--the 4-year-old spilled the whole lot of goods this afternoon, enraging my 8 year-old) but I know they will love this.

Never in my life have I heard of baked pancake squares, but it sure sounds like a great idea! The strawberries sure looked like hearts to me. Cute Valentine's Day breakfast!

Kim, pancake squares has to be one of the very best ideas I have ever seen. I cannot being to tell you how MUCH I LOVE this idea. Oh my gosh, soooo clever and convenient, with a world of possibilities. When I think of the number of pancakes I've mooshed up and the standing over the stove making the last of the batch while Ole Sweetie-Pi has already eaten his and is done, well, this solves a lot of my angst. LOVE LOVE LOVE this!

The strawberries definitely loook like little hearts - saw that right away. Never made pancake squares - like the ease of them - and you don't need to wait for a special day to show your heart!

How interesting! I've never thought to do pancakes in any shape other than round! I actually let my hubs take me out for brunch at our favorite local place (run by a good friend). But next week it's back to cooking for me, so I'll give these a go..but still waiting on strawberries to drop in price. ;( Hope you had a rockinsweet Valentine's Day!
