Hello, Love Muffin!

Today I went to Target in search of Valentine cards. My kids are easy to buy cards for, anything with cute kittens or puppies are always a big hit. When it comes to choosing for my husband; however, I have a much more difficult time. Valentine cards are just so gloppy and sappy. They're a bit like maple syrup! Seriously, who talks to their husband or wife this way?! I must have put back 30 cards before I found one I could stomach. Don't get me wrong, I love my husband very much. He is kind, devoted, hard working, a great dad, and he always knows how to fix things when they break (computers, phones, plumbing, leaky roofs...). I can't imagine life without him. Now, if I could just find a card that said all of this, I'd be set! ;D

I thought I was going to make cupcakes for Valentine's day but somehow I ended up with these muffins.

If I hurry I can still squeeze in a batch of cupcakes as well. We'll see.

I was happy to find such nice strawberries so early!

And thank goodness chocolate chips are available anytime of year. I don't think I could survive if chocolate chips were a seasonal item! ;)

I actually ate one of these for breakfast this morning. Boy, was it yummy!

Oatmeal Strawberry Chocolate Chip Muffins
by theUngourmet

Print recipe

1 cup oats
1 cup whole wheat pastry flour
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup oil
1/2 cup reduced fat buttermilk
1 tsp vanilla
1/2 cup chopped fresh strawberries
1 cup chocolate chips

In a medium sized bowl whisk together oats, flour, sugar, baking powder baking soda and salt. In a larger bowl combine the egg, oil, buttermilk and vanilla. Beat until combined. Add the dry ingredients to the egg mixture. Stir just until combined. Fold in the strawberries and chips.

Divide batter evenly into 12 greased muffins cups and bake at 350 for about 20 minutes.

I love the strawberry and chocolate together in these muffins. They kind of remind me of a cookie.

Happy Love day!

Ooh... could you send some of those muffins my way? I love chocolate and strawberries.

I have a hard time finding cards I like at Target. I have much better luck with Hallmark and Papyrus. Plus the Hoops and Yoyo cards at Hallmark are always a lot of fun!

Oooohh! I am SO going to make these! Strawberries and chocolate perfection! Thanks, Sweets!

I agree with you about the valentine cards. Some are truly enough to make you want to vomit. When you find one that says what you want it to say it is a moment of victory!:) Lori

What a great idea. Valentines Day muffins. My husband doesn't care about cards anyway so I might as well borrow your recipe and make something we'll both like.

(And I agree - I couldn't survive is chocolate chips were seasonal either!)

I don't think I've had those flavors together before. It sounds yummy!

And Happy Luv Day to you, too!!! I'm going to file this recipe away for a little bit. They are still charging a pint of blood and the first born child for strawberries here. But I anticipate I'll be making these very soon...maybe before all the snow melts!

If chocolate was a seasonal item, I would totally budget for it. I mean..I would give up wine before I'd give up chocolate. And I think that says something...

Sure making a lot of delicious looking muffins lately! And the photos are so wonderful.

Love the photos of the strawberries, makes me think of early summer with the windows open and sipping a cool glass of lemonade!

You know. Muffins with chocolate chips in them? Kind of like cupcakes. Except you feel less guilty about eating them for breakfast. It's all semantics.

These look delicious! And yes, V-day cards can be truly obscene. Why can't hallmark just make one that says, "Hey. You're kind of awesome."

Strawberry muffins! That's a great idea. And happen to have strawberries on hand... how fortunate.

I have the same problem with cards - often make them these days. And I hate the birthday cards also - either gloppy or just in horrid taste - nothing seems celebratory! I do love though - the muffins. Our groceries have had an influx of some very fine strawberries and I've been buying every day (and not expensive). Off to makemuffins. Happy Valentine's Day!

Now what could be more romantic than chocolate and strawberries. This is great! Ole Sweetie-Pi calls me Snookums; kind of sappy but it makes me laugh every time, which is the idea, I think.

Now that looks like a GOOD muffin. I wasn't able to print from your print button. Can you help a girl out? I think this will be a winner with the boys!
