peanut butter and jelly oatmeal muffins

My son's class just finished studying China and now they have moved on to Japan. All of the students are working together to fold one thousand cranes to send to Japan, which means each student must fold A LOT of cranes. I have to tell you that I am Origami challenged! I had to go to several websites before I finally found a video on crane folding that I could actually follow. I don't do diagrams, I have to see someone doing the folding, and, of course, the pause button is a must! I stink at Origami, Sudoku and video games. I'm feeling like Alzheimer's is inevitable. I wonder if baking muffins wards off Alzheimer's??? I'm pretty good at that! ;0)

I have been wanting to make peanut butter and jelly muffins ever since I spotted them over at Eat at Home.

I always love adding oats to my muffins for extra goodness.

Don't let this simple looking muffin fool ya! There's a lovely sweet surprise in the middle! It looks kind of like a heart too! How cute is that!

Oatmeal Peanut Butter and Jelly Muffins

Print recipe

1 1/3 cups whole wheat pastry flour
1 cup quick cooking oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup brown sugar
1/4 cup sugar
1 egg
1/4 cup canola oil
1/3 cup peanut butter
1 1/4 cups reduced fat buttermilk
1 tsp vanilla
12 tsp grape jam

Preheat oven to 375. Grease 12 muffin cups.

In a large bowl combine the flour, oats, baking powder, baking soda, salt and sugars. In a smaller bowl combine the egg, oil, peanut butter, buttermilk and vanilla.

Pour the egg mixture into the flour mixture and stir just until combined.

Fill each muffin cup 1/2 full and place 1 tsp of jam on top of batter. Place another scoop of batter over the top of jam. Fill muffin cups to nearly full.

Bake for 18-20 minutes. Place muffins on a baking rack to cool.

I love these muffins! Make a batch for your kids or just for yourself if you have time. They were quick and easy to throw together and will be a great treat for breakfast tomorrow morning!

Once again, very creative! By the way, isn't there some store that sells those cranes? I wouldn't tell anyone if you bought them already folded. Hee, hee!

Lol. wow that's a lot of cranes. I remember so something similar back in grade school, but it was to the extent of 1000!! hehehe...

You know those muffins would be perfect for a post birthday breakfast. I love how the jelly just oozes out in the middle. Yum!!!

i was wondering if it had to be pastry flour? I have regular whole wheat flour. would that be okay? I know the flour makes it or breaks it sometimes.

I tried to make gnocchi once, and it was a disaster - until I looked up a video on youTube and watched an Italian grandma make it - then it was easy!

Oh that's freaking awesome and I've NEVER HEARD OF THEM!! I mean, I just took peanut butter and jelly shots at a Super Bowl party (the trick is to add a little bit of Bailey's and a LOT of Frangelico) and I made fried peanut butter and jelly sandwiches (something we stumbled upon when he was stationed at Camp Atterbury)...but this is a first. I'll let you know how it goes. Sometimes he's funny about gooey-centers. ;)

Suzi made these. They were great. What else can I say. I guess I am just lucky that my SIL lives next door and she actually gets motivated and cooks new stuff. I will say I have incorporated a "stew" into my bi weekly routine and am loving it.

I just made these using a cinnamon/sugar soy butter (Simply Soy brand) as I'm allergic to peanuts. I adjusted the sugar a little bit in the recipe...these came out awesome! I used strawberry jam...thanks for the recipe!

I just made these this morning and I'm in love! I can't decide if they're better warm or room temp. Either way they're DIVINE. If you're watching your weight, save these for an occasional treat- each muffin has 250 cals. & 12 fat grams. So worth it, though!
