My son's class just finished studying China and now they have moved on to Japan. All of the students are working together to fold one thousand cranes to send to Japan, which means each student must fold A LOT of cranes. I have to tell you that I am Origami challenged! I had to go to several websites before I finally found a video on crane folding that I could actually follow. I don't do diagrams, I have to see someone doing the folding, and, of course, the pause button is a must! I stink at Origami, Sudoku and video games. I'm feeling like Alzheimer's is inevitable. I wonder if baking muffins wards off Alzheimer's??? I'm pretty good at that! ;0)
I have been wanting to make peanut butter and jelly muffins ever since I spotted them over at Eat at Home.
I always love adding oats to my muffins for extra goodness.
Don't let this simple looking muffin fool ya! There's a lovely sweet surprise in the middle! It looks kind of like a heart too! How cute is that!
Oatmeal Peanut Butter and Jelly Muffins

Print recipe
1 1/3 cups whole wheat pastry flour
1 cup quick cooking oats
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup brown sugar
1/4 cup sugar
1 egg
1/4 cup canola oil
1/3 cup peanut butter
1 1/4 cups reduced fat buttermilk
1 tsp vanilla
12 tsp grape jam
Preheat oven to 375. Grease 12 muffin cups.
In a large bowl combine the flour, oats, baking powder, baking soda, salt and sugars. In a smaller bowl combine the egg, oil, peanut butter, buttermilk and vanilla.
Pour the egg mixture into the flour mixture and stir just until combined.
Fill each muffin cup 1/2 full and place 1 tsp of jam on top of batter. Place another scoop of batter over the top of jam. Fill muffin cups to nearly full.
Bake for 18-20 minutes. Place muffins on a baking rack to cool.
I love these muffins! Make a batch for your kids or just for yourself if you have time. They were quick and easy to throw together and will be a great treat for breakfast tomorrow morning!
Happy Tuesday!

Once again, very creative! By the way, isn't there some store that sells those cranes? I wouldn't tell anyone if you bought them already folded. Hee, hee!
Those look incredible!
I've tried a few origami things and I have to say that some of it REALLY confuses me - sounds like a cool project though!
Oh a muffin with an extra surprise, cannot get better than that.
Good luck to your son with the crane project.
xoxo
Since I adore peanut butter and jelly, this has been bookmarked!
I can't do origami either. Or rather, I CAN do it, it just never looks like it's supposed to.
Those muffins look so good. (I feel like I say the same thing each time I comment, I'm sorry! Your food always looks delicious, I can't help it.)
And PS: I bought my first jar of Nutella yesterday. I thought you'd be proud. :)
Oh jeez that jelly, just magnificent!
You really know how to combine PB & J, Kim. Love the jam in the center of the muffins. These really look fantastic.
Those muffins DO look like they have a heart in the center! Yum!
Oh, YUM! I love that jelly on the inside! Awesome muffins!
Ooh, yummy yummy! Gotta have a cold glass of milk with these muffins, I'm thinking!
These look delicious! I can't wait to make them!
Thanks for visiting my new blog (a work in progress.)
Oh. My. God. I can't deal with this post right now. So much peanut butter. So much jelly. So much heaven. You are a genius, have I mentioned that recently?
Also, I am the WORST at origami. Even a video wouldn't help me.
great recipe! Looks and sounds so comforting!
Lol. wow that's a lot of cranes. I remember so something similar back in grade school, but it was to the extent of 1000!! hehehe...
You know those muffins would be perfect for a post birthday breakfast. I love how the jelly just oozes out in the middle. Yum!!!
I stink at origami - and that's a whole lto of cranes- based on the bnook/play 1,000 cranes? I wonder. I much prefer the muffins - love the surprise inside!
i was wondering if it had to be pastry flour? I have regular whole wheat flour. would that be okay? I know the flour makes it or breaks it sometimes.
I need to "see" it done rather than reading it out of a book.
I tried to make gnocchi once, and it was a disaster - until I looked up a video on youTube and watched an Italian grandma make it - then it was easy!
Your muffins look amazing!!
Love oats to bits and so anything oatsie is my delight!
Will try this and let you know how I get on, ha.
i'm with you, i an't do any of that stuff. i'm actually worried for when my kids get older and we have to do things like science projects!
these look so good! my family would dig them!
OMG, must make some tomorrow! Print button please?
LOVE these! That oozing jelly inside is deeeelish. What a treat!
Kim, what a great match...peanut butter and jelly in a muffin :-) Sounds and look delicious. Origami...haven't done those for a while, but Sudoku still enjoy it :-)
What a GREAT muffin. And especially for kids... wonderful post... good luck with the folding
These would be great to put in lunches too!! My daughter is a senior and still brings her lunch every day. Thanks again, Kim, for a great one ~ ♥
You can't beat pb&j...and the heart shaped center is darling!
I think I'd go nuts if I had to fold more than one origami LOL
What a great idea for a muffin! I agree, they would be perfect lunchbox fare.
Yummy, these look delicious. I am not one to mix peanut with chocolate but adore PB&J. These do sound like they would be great.
I am liking the idea I do not have to dirty a knife to spread the jam love, because it is inside! Hubby will go nuts for these!
First of all thank you for the printable form, I love that. I am going to make these, they sound awesome.
I'm having deja vu. I have a PB and jelly muffin recipe too - and the insides looked like hearts. One of my all-time favorites!
My few attempts at oragami were not spectacular. 1000 cranes is quite a goal!
These muffins look SO good! Love the pretty heart-shaped jelly centers.
yum! i love muffins. :)
Dearest Kim, your son's class sounds really interesting! My fiance love peanut butter and i wonder if i could make this successfully for him. hehe Thank you so much for sharing this with us! Have a lovely merry day and love to you!
Look at that jelly...these heatlthy muffins would be amazing. I remember when my daughter was in elementary school teaching a rudementary lesson in oragami...jumping frogs all over the classroom:D
Why have I never seen these before?
Very delish looking muffins! So convenient with the jam in the middle too.
Tuffine really caught my attention. Very nice!
always love your muffins
I just made banana cupcakes with peanut butter buttercream last night, but these with their jammy centers just look divine! I'll have to try them soon!
The peanut butter flavoured muffins with melting jam are the best breakfast choice!
How to fold a crane? Show the project next time?
I have to turn in my Japan card. My mother tried to teach me the paper cranes and I just don't get it.
I'm with you; I'm much better at making muffins. These look delicious.
Thank you for sharing this delectable post.
Yum-OH! Thanks for sharing!
Oh that's freaking awesome and I've NEVER HEARD OF THEM!! I mean, I just took peanut butter and jelly shots at a Super Bowl party (the trick is to add a little bit of Bailey's and a LOT of Frangelico) and I made fried peanut butter and jelly sandwiches (something we stumbled upon when he was stationed at Camp Atterbury)...but this is a first. I'll let you know how it goes. Sometimes he's funny about gooey-centers. ;)
Those muffins look great. I have not had a pbj sandwich since elementary school...these seem like the perfect grownup treat.
Ahhh!!! So yummy looking. this is a keeper recipe. thanks=)
Yummy! Muffin making might ward off Alzheimer's & keep up the origami as seems creative arts helps to beat Alzheimer's - learned about it in a documentary on youtube:http://www.youtube.com/watch?v=54AtoQVGfwU
Oh my.. another great recipe! Love pb and jelly combo!
wow! this is a recipe that needs to be tested! i love it! thank you for sharing :)
have a great day,
justyna
This is the ultimate muffin!!
Wow, I think I tried making these once before, but they didn't come out nearly this good! Will have to give them a try again. Thanks for the inspiration.
Your recipes always make me want to cook!
Aw, I love how it's heart shaped in the middle :) Looks delicious!
wow, so unique and so delish! It's like a bite of childhood.
What a beautiful marriage of a muffin!
yum! those cupcakes oozing jelly look sinful!
Suzi made these. They were great. What else can I say. I guess I am just lucky that my SIL lives next door and she actually gets motivated and cooks new stuff. I will say I have incorporated a "stew" into my bi weekly routine and am loving it.
My mouth is watering; these look fabulous...very creative, Kim...great recipe!
I just made these using a cinnamon/sugar soy butter (Simply Soy brand) as I'm allergic to peanuts. I adjusted the sugar a little bit in the recipe...these came out awesome! I used strawberry jam...thanks for the recipe!
I found your recipe at the Post Gazette. I made the muffins and put my rendition on my blog. I came to check out your site after seeing you were the contributor for the muffins. First I'd like to say that these were amazingly good muffins without all the fat. Second, I am so glad I found your blog. I looked at your recipe list and there are so many things I would like to try.
I just made these this morning and I'm in love! I can't decide if they're better warm or room temp. Either way they're DIVINE. If you're watching your weight, save these for an occasional treat- each muffin has 250 cals. & 12 fat grams. So worth it, though!
I featured this recipe today on Fun Friday Finds over on my blog. If you have a minute to stop by to check it out that would be great.
