Ooey-Gooey caramel apple pecan muffins

I realize that apple season is long gone but when I found this recipe I couldn't resist baking up these ooey-gooey muffins! I love having muffins around for a quick, on-the-go breakfast.

I changed the ingredients around just a bit. These muffins are packed with yummy goodness-oats, flax, whole wheat, apples, pecans...

These are sort of an upside down muffin. The bottom of each cup is filled with a dab of butter, a smidge of brown sugar, and a sprinkling of leftover cinnamon toasted pecans.

The muffin pan is placed into a warm oven for a few minutes to caramelize the butter and sugar.

I was worried I wouldn't be able to get them out of the pan, but they slid out quite easily. Yay!

Caramel Apple Pecan Muffins
recipe adapted from She Eats Bears

Print recipe

1 egg, slightly beaten
1/2 cup canola oil
1/2 cup 2% Greek style plain yogurt
1 cup peeled, grated apple
1 tsp vanilla

1 cup oats
1 cup whole wheat pastry flour
1/4 cup ground golden flax
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 cup brown sugar

1 cup (or less) cinnamon toasted pecans
1/4 cup butter
1/4 cup brown sugar

Lightly oil 12 muffin cups. Evenly distribute the 1/4 cup butter 1/4 brown sugar and the pecan into the bottom of each cup. Place into a 350 degree oven for about 5 minutes. Remove from oven and set aside.

In a large bowl combine the egg, oil, yogurt, apple and vanilla. In a smaller bowl combine the oats, flour, flax, baking powder, baking soda, salt, cinnamon and brown sugar. Add the dry ingredients to the wet ingredients and stir just until combined.

Fill muffin cups nearly full and bake at 350 degrees for 20 minutes. Place a cooling rack on top of muffin pan and invert. Allow muffins to cool on rack.

These muffins remind me of cinnamon rolls, but they are much more nutritious.

you can't even imagin how much i would like to have one of these now! this recipe looks perfect, just perfect, especialy when it's freezing outside and there is so much to do in the office. a kind of perfect comfort food!

I'm pretty sure it's always apple season in my world (or at least it would be if I had my way). These look amazing! I would be so tempted to fill half the cupcake liner with the caramel pecan mix. Or just eat it straight.
