Today I went to Target in search of Valentine cards. My kids are easy to buy cards for, anything with cute kittens or puppies are always a big hit. When it comes to choosing for my husband; however, I have a much more difficult time. Valentine cards are just so gloppy and sappy. They're a bit like maple syrup! Seriously, who talks to their husband or wife this way?! I must have put back 30 cards before I found one I could stomach. Don't get me wrong, I love my husband very much. He is kind, devoted, hard working, a great dad, and he always knows how to fix things when they break (computers, phones, plumbing, leaky roofs...). I can't imagine life without him. Now, if I could just find a card that said all of this, I'd be set! ;D
I thought I was going to make cupcakes for Valentine's day but somehow I ended up with these muffins.
If I hurry I can still squeeze in a batch of cupcakes as well. We'll see.
I was happy to find such nice strawberries so early!
And thank goodness chocolate chips are available anytime of year. I don't think I could survive if chocolate chips were a seasonal item! ;)
I actually ate one of these for breakfast this morning. Boy, was it yummy!
Oatmeal Strawberry Chocolate Chip Muffins

Print recipe
1 cup oats
1 cup whole wheat pastry flour
1/2 cup packed brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
1/2 cup oil
1/2 cup reduced fat buttermilk
1 tsp vanilla
1/2 cup chopped fresh strawberries
1 cup chocolate chips
In a medium sized bowl whisk together oats, flour, sugar, baking powder baking soda and salt. In a larger bowl combine the egg, oil, buttermilk and vanilla. Beat until combined. Add the dry ingredients to the egg mixture. Stir just until combined. Fold in the strawberries and chips.
Divide batter evenly into 12 greased muffins cups and bake at 350 for about 20 minutes.
I love the strawberry and chocolate together in these muffins. They kind of remind me of a cookie.

I have a hard time finding cards I like at Target. I have much better luck with Hallmark and Papyrus. Plus the Hoops and Yoyo cards at Hallmark are always a lot of fun!

I have the same problem with cards - often make them these days. And I hate the birthday cards also - either gloppy or just in horrid taste - nothing seems celebratory! I do love though - the muffins. Our groceries have had an influx of some very fine strawberries and I've been buying every day (and not expensive). Off to makemuffins. Happy Valentine's Day!
