I received some terrific feedback on my last post. It seems there are some StRoNg opinions out there regarding blue/bleu cheese. It definitely has a StRoNg flavor and a pungent aroma.
I love big cheeses like this! I have yet to meet a cheese I don't like. I'd love to try my hand at making some from scratch like Natashya, Girlichef, and doggybloggy have done. I have a recipe in mind, we'll see if I can get around to it.

I have been eating blue cheese leftovers for the past three days. This is how I used some of it up at lunchtime yesterday.
I made myself a lovely omelet with baby spinach, blue cheese, and lots of cracked pepper.
I am in awe of Julia Child's omelet making abilities. I can tell you that I really suck at making them. They always break apart. It could be due to the fact that I don't have the right pan.
I have a birthday coming up, maybe I'll ask for an omelet pan!!
There is no specific recipe for this one. Just add as much or little of each ingredient as you'd like.
Even though my omelet broke apart, it was still fantastic! I savored Each. Cheesy. Bite! :0)
Happy Day to You!

You are a genius! That looks soooo good.
I want to try and make cheese too. Only if I can stop being chicken about it. I think I may just have to make me some omelets tonight.
Oh, I hope you get your omelet pan! :-) This sounds so delicious :-)
What's a broken omelet when it's smothered in cheese and spinach. There ain't nothing wrong with that.
This sounds absolutely delicious. The wikihow site has wonderful step by step instructions for blue cheese http://www.wikihow.com/Make-Blue-Cheese
Okay, yeah, I'm in for this one too...how yummy!!!
you have definitely found the right light for you photos - they are beautiful....
YUM!! I have to say that your photos are AWESOME!! I am definitely voting for you to make your own cheese!! Have a great weekend.

thanks for the linky love - and a basic farmers cheese is easy and a great way to start - its called 'paneer' in Indian cooking.
Oh wow...that is one forkful of goodness!
I happen to see the omelette episode of French Chef and loved it too...
My gosh, I LOVE your photos on this post! The colours are so crisp and clean. :) Cheese and eggs are a match made in heaven.
Oh I can sing the 'blues' and it ain't sad songs either!
Can't be anything wrong with cheese, eggs and spinach - that's a forkfull of heaven! Great photos. Thanks for sharing.
Your omelet looks delicious! I love all your cheese photos! Have you seen Julia make her french omelet from her show? That is how I learned to make a french omelet--after watching her make 20+ omelets, it was exciting to find out how easy it was. :)
I have never made any omelet with blue cheese...I meant, I didn't think of using blues in the omelet...how silly of me! That looks seriously delicious!
I'll enjoy every cheesy bite:D
what a fab omelet!
A great combination of flavors, Kim. What a tasty lunch! Who cares of the omelet isn't perfect. It doesn't affect the taste one bit.
Of course you can make blue cheese look like something I can't do without! The omelet looks fab ~ ♥
Never met a cheese I didn't like. I love watching chefs in restaurants make omelettes. they make it seem so easy -without effort really. At home, if it breaks apart - it breaks apart. It's still delicious.
OH this sounds and looks so good! Lovely photos too! Just bought a new brand of blue cheese too and it's just waiting for something special!
Ben used to make me cheese omlets every night...sigh.
My omelets always end up as scrambled eggs. I am completely inept at flipping them.
This is a great combo for an omelet!
first of all, i love the idea of an omelette for lunch, especially with fantastic recipes like these! second, i know i keep saying this, but dang girl, those photos are fantastic! great great post!
This looks really fantastic, Kim! And wow, your pics really absolutely GORGEOUS!!! I'm crossing my fingers for your omelet pan! ;)
Pile it on and send it here. YUM YUM
This looks so yummy!!!
Oh my, those omelets sound sooo yummy. I could eat just about anything if you put blue cheese in it. Well, not anything, but close!
I love the ingredients in this omelet. I've never put blue cheese in an omelet but my husband and I really like blue cheese.
Thanks for leaving a comment on my blog. I appreciate you stopping by. I'm enjoying browsing your blog. I have the same philosophy as you...simple but delicious meals. I'll be back.
