Spinach blue cheese and cracked pepper omelet

I received some terrific feedback on my last post. It seems there are some StRoNg opinions out there regarding blue/bleu cheese. It definitely has a StRoNg flavor and a pungent aroma.

I love big cheeses like this! I have yet to meet a cheese I don't like. I'd love to try my hand at making some from scratch like Natashya, Girlichef, and doggybloggy have done. I have a recipe in mind, we'll see if I can get around to it.

I have been eating blue cheese leftovers for the past three days. This is how I used some of it up at lunchtime yesterday.

I made myself a lovely omelet with baby spinach, blue cheese, and lots of cracked pepper.

I am in awe of Julia Child's omelet making abilities. I can tell you that I really suck at making them. They always break apart. It could be due to the fact that I don't have the right pan.

I have a birthday coming up, maybe I'll ask for an omelet pan!!

There is no specific recipe for this one. Just add as much or little of each ingredient as you'd like.

Even though my omelet broke apart, it was still fantastic! I savored Each. Cheesy. Bite! :0)

Happy Day to You!

I want to try and make cheese too. Only if I can stop being chicken about it. I think I may just have to make me some omelets tonight.

What's a broken omelet when it's smothered in cheese and spinach. There ain't nothing wrong with that.

Your omelet looks delicious! I love all your cheese photos! Have you seen Julia make her french omelet from her show? That is how I learned to make a french omelet--after watching her make 20+ omelets, it was exciting to find out how easy it was. :)

I have never made any omelet with blue cheese...I meant, I didn't think of using blues in the omelet...how silly of me! That looks seriously delicious!

A great combination of flavors, Kim. What a tasty lunch! Who cares of the omelet isn't perfect. It doesn't affect the taste one bit.

Of course you can make blue cheese look like something I can't do without! The omelet looks fab ~ ♥

Never met a cheese I didn't like. I love watching chefs in restaurants make omelettes. they make it seem so easy -without effort really. At home, if it breaks apart - it breaks apart. It's still delicious.

Ben used to make me cheese omlets every night...sigh.

My omelets always end up as scrambled eggs. I am completely inept at flipping them.

This is a great combo for an omelet!

Oh my, those omelets sound sooo yummy. I could eat just about anything if you put blue cheese in it. Well, not anything, but close!

I love the ingredients in this omelet. I've never put blue cheese in an omelet but my husband and I really like blue cheese.
