Cranberry and apple baked oatmeal

I think breakfast is my favorite meal of the day. When the weekend rolls around, I love putting together something warm and inviting to help start the day off right.

My husband is taking a vacation week along with the kids so today didn't feel like Monday to me, it felt like Sunday again. I decided it was only right to whip up another weekend breakfast.

I love baked oatmeal! A few months back I made this baked oatmeal recipe. It was so delicious! I've had it in the back of my mind ever since.

I decided to change the ingredients list just a bit to make it more seasonal. The cranberries were a wonderful addition. I'm thinking I may actually prefer this recipe.

This would be wonderful to serve family or friends visiting for the holidays or as part of a Christmas brunch.

I like to pour a bit of warm milk or cream over the top. It's great either way really.

Cranberry and Apple Baked Oatmeal

3 cups rolled oats
3/4 cup packed brown sugar
2 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
2 eggs lightly beaten
1 cup milk
1/2 cup melted butter, cooled to room temperature
1/3 cup apple butter
1 large apple, peeled and grated
1/3 cup dried cranberries

Warm milk or cream (pour over warm oatmeal if you so desire)

In a large bowl combine the oats, brown sugar, baking powder, cinnamon, and salt. In a smaller bowl combine the eggs, milk, and butter. Add egg mixture to oat mixture. Stir to combine. Fold in the apple and cranberry. Pour into a greased 9 inch round (or square) pan. Bake on 350 for 35-40 minutes. Serve warm.

Darling apron and it suits you so well too! I have collected aprons for years now and have literally hundreds of them!

Although I love oatmeal, I've never tried baked oatmeal before. Hmmmmm....I'm thinking it would be good for my Christmas Morning Brunch!

I admit I do not wear aprons since I seem to forget to pull it out, and then I have already made a mess...I will however go check them out...maybe I should have shopped there before amazon.com from my office!

Lovely apron. I'm not much of an apron wearer, Though, relative of mine I did get me one made from Greece. Haven't used it yet.

Cranberries are so good - I'm going to buy extra and keep some in the freezer for future baking.

Breakfast is definitely my favorite meal of the day as well, although I have never had baked oatmeal. Shame on me! The cranberries and apples sound delicious in it though. What an excellent combination.

I wear aprons but I go with a longer more bistro look usually in a solid color - I wonder how something like this would look on me? we made chocolate oatmeal as a snack last night I bet baking it off like this would be great!
