Cranberry and apple baked oatmeal

I think breakfast is my favorite meal of the day. When the weekend rolls around, I love putting together something warm and inviting to help start the day off right.

My husband is taking a vacation week along with the kids so today didn't feel like Monday to me, it felt like Sunday again. I decided it was only right to whip up another weekend breakfast.

I love baked oatmeal! A few months back I made this baked oatmeal recipe. It was so delicious! I've had it in the back of my mind ever since.

I decided to change the ingredients list just a bit to make it more seasonal. The cranberries were a wonderful addition. I'm thinking I may actually prefer this recipe.

This would be wonderful to serve family or friends visiting for the holidays or as part of a Christmas brunch.

I like to pour a bit of warm milk or cream over the top. It's great either way really.

Cranberry and Apple Baked Oatmeal
by theUngourmet

3 cups rolled oats
3/4 cup packed brown sugar
2 tsp baking powder
1 tsp ground cinnamon
1 tsp salt
2 eggs lightly beaten
1 cup milk
1/2 cup melted butter, cooled to room temperature
1/3 cup apple butter
1 large apple, peeled and grated
1/3 cup dried cranberries

Warm milk or cream (pour over warm oatmeal if you so desire)

In a large bowl combine the oats, brown sugar, baking powder, cinnamon, and salt. In a smaller bowl combine the eggs, milk, and butter. Add egg mixture to oat mixture. Stir to combine. Fold in the apple and cranberry. Pour into a greased 9 inch round (or square) pan. Bake on 350 for 35-40 minutes. Serve warm.

I wanted to show you my new apron! I have been trying to win over at The Apron Goddesses since last February and finally my number came up!! Yay! Isn't it just the cutest apron ever? I love it! It's a D-Lux 57 apron. It came wrapped up in the cutest little matching bag and included a pretty card with a hand written note and a coupon for my next purchase.

If you love aprons or know someone who does, I highly recommend you go and check out The Apron Goddesses blog. Julia and Suzi are always having wonderful giveaways and fun apron photos and info. Go take a peek!

Darling apron and it suits you so well too! I have collected aprons for years now and have literally hundreds of them!

Although I love oatmeal, I've never tried baked oatmeal before. Hmmmmm....I'm thinking it would be good for my Christmas Morning Brunch!

What a great looking dish, and the food is always good here too!

I admit I do not wear aprons since I seem to forget to pull it out, and then I have already made a mess...I will however go check them out...maybe I should have shopped there before amazon.com from my office!

Never had oatmeal baked like this before. Mmm...

Lovely apron. I'm not much of an apron wearer, Though, relative of mine I did get me one made from Greece. Haven't used it yet.

You look so pretty and festive in your holiday apron. Love the holly frame around the photo.

Cranberries are so good - I'm going to buy extra and keep some in the freezer for future baking.

I would love a hot bowl of this delicious oatmeal right now.

Breakfast is definitely my favorite meal of the day as well, although I have never had baked oatmeal. Shame on me! The cranberries and apples sound delicious in it though. What an excellent combination.

Ah yes well...you had me at chocolate gravy and then you lost me at oatmeal. But that's OK...I'm doing an Ungourmet Challenge...I'm doing 2 weeks worth of meals solely from your website. Well, after the insanity of the holidays. I cannot WAIT to serve my husband lasagna from the muffin tin.

Love, love, LOVE the apron!!
