real cowboys eat wraps

I had to make up for my last meal of soup chowder and bread, so I decided to knock my husband's socks off (or as Mary says, "make his socks go up and down") with some meaty cowboy pizza wraps.

These wraps are super easy and packed with flavor.

Cowboy Pizza Wraps

Ingredients

Makes four wraps

3 Italian sausage links, removed from casings
24 slices of pepperoni
1 cup of sliced mushrooms
1/2 cup sliced black olives
1 cup shredded Mozzarella cheese
1/2 cup shredded Parmesan cheese
1 large diced tomato
1 8 oz can of Italian style tomato paste
1 tsp dried oregano
4 large flour tortillas

In a large skillet break up and thoroughly cook the sausage. Drain. Add a bit of oil to the same pan and saute the mushrooms for a couple of minutes.

Warm the flour tortillas in the microwave. Spread about 1 tbsp of tomato paste onto each tortilla. Layer each tortilla with the pepperoni, sausage, mushrooms, cheeses, olives, and tomato. Sprinkle with a pinch of the oregano. Roll up tightly and brown on each side on a lightly oiled skillet.

Serve to your hard working cowboy while it's all hot and melty and he'll forget all about that dreadful soup chowder from the night before. Guaranteed!

Those wraps look amazing. I will for sure wow my husband with those. I am super impressed and jealous of your food photography. Can I trouble you for a hint or two as far as your settings? I am trying to improve my pictures and wondering if it is better to upgrade the camera or purchase photoshop. I realize the operator is also part of the problem. Either way, you are amazing. I pretty much want some of your chicken chowder now. I just got dental work done and need soup! Thanks for sharing!

Delicious! Another great wrap combo! I really need to take my queue from you and keep stuff like this on hand so I can whip up some wraps instead of turning to the takeout menus when we have no idea what to have for dinner.

You make the yummiest sounding wraps!! (And, I loved your soupchowdersoup, too!)

I love that you browned the wraps after - makes it almost a pizza chimichanga! :-)

Just FYI -- I am printing this off right now. I don;'t know how you do it but everything you make looks wonderful!

If I was Oprah I would hire you to be my personal chef - for $1 million dollars of course - lol.
