Murphy's Law and a Tuscan Chicken Wrap

I am a true believer in Murphy's Law, even though I don't know just who the heck he/she is. Tomorrow is the first day of school for my two kiddos and I am doing my best to get them to bed at a reasonable hour so that they wake up refreshed and ready to take on the world (or at least the 2nd and 7th grades!).

So, I get them both tucked in and cozy and I'm sitting down to get this post done when my son calls me into his room to tell me he just can't sleep. I rub his arm lovingly and realize that he is still covered with soap from his bath. ACK! Back to the bathtub we go... Meanwhile my daughter has discovered what she believes is a tarantula sized spider on her wall and has run into the living room for safety and is now contentedly watching Unwrapped Doughnut addition on Food Network.

I get the boy rinsed and dried and back into bed (shivering all the way) and proceed to my daughter's room, armed with a flip flop. I don't see the hairy intruder on the wall (but I can feel his presence) so I begin tossing stuffed animals off the bed, ever so carefully. Finally, I spy him, he is staring at me with all of his 800 microscopic eyes, he's trying to lie still and pretend he's dead, but he can't fool me. SMACK! I smash him four or five times, fling him to the floor and step on him, grab a tissue, pick him up and flush him down the toilet. I'm 99% sure he was dead.

Next, I tear my daughter's bed apart, clean out the garbage from underneath, take out dirty clothes, shoe boxes and a container of stuffed animals, all in an attempt to rid the room of any spider brothers or sisters.

Whew! At least another 30 minutes has passed and we are once again tucked into bed. -Except for me. I still need to finish this post!

I went with a wrap for dinner. Hard to believe, right?!

Here's what ya need to make this one. Ready? Okay. Away we go!

For the chicken:
  • 3-4 lb chicken boneless skinless chicken thighs
  • 2 cups water or chicken broth
  • 1/2 cup dry white wine
  • 2 tbsp olive oil
  • 1 tsp dried crushed rosemary
  • juice from 1 lemon
  • 2 cloves minced garlic
  • 1 tsp dried minced onion
  • 1 tsp kosher salt
  • cracked pepper to taste
  • 1 14.5 oz can of Cannellini beans, drained and rinsed
Place all ingredients into a crock pot and cook on low for 4 to 5 hours. Add the beans and cook for another 30 minutes. Remove chicken and beans from crock with a slotted spoon and discard cooking liquid.

You will also need:
  • Zippy Mayo
  • wild salad green mix
  • thick tomato slices
  • 4-5 large flour tortillas
For the Zippy Mayo I used:
  • 1/2 cup mayo
  • juice from 1/2 a lemon
  • 1 tsp fresh basil
  • 1/2 tsp dried crushed rosemary
  • 1/2 tsp dried tarragon
  • 1 clove minced garlic
You can make the mayo ahead of time and place into the fridge to let the flavors do their dance.

Spread 1 (or more) tbsp of the zippy mayo on a warm tortilla, add a generous spoonful of chicken and beans, lettuce, and tomato. Wrap it up tight. Chow down.

Hahaha, your kids are so cute. And so are you! That's how I kill spiders too. Don't you hate how after you kill a spider, it feels like its "ghost" lingers?? Ew.

The wraps look good! I have a bad habit of overstuffing mine, so that all the filling falls out.

I go through the spider thing almost ever night with Ole Sweetie-Pi. he's usually the one dancing around with a rolled up paper or slipper because he sees creepy crawlies LOL

Sounds like quite a dramatic night for you guys...nothing like pre-school jitters to keep kids awake at night. I have to say I love that you sat your daughter down in front of the Food Network - classic foodie move.
