It's been a few weeks since I posted a bloggy friend's recipe! This is such a busy time of year isn't it?!
Well, this week I bring you a fabulous zucchini bar from Kathie at The Garden of life. I love Kathie's blog. She is a wonderful photographer, a fabulous cook, a great mom to three very handsome young men, and she has the cutest doggy! Oh yes, and she is also just adorable!
I have been wanting to make these bars ever since I saw them. Kathie says that she has been making them for as long as she can remember and that the recipe is from her mom.
I had to change Kathie's recipe just a touch as I was missing a couple of the ingredients. Here is the way I did it:
- 1/2 cup brown sugar
- 1/2 cup sugar
- 3/4 cup butter, softened
- 1 tsp vanilla
- 1 3/4 cups whole wheat flour
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 2 cups zucchini, shredded
- 2 eggs
- 3/4 cup toasted sliced almonds
- 1/2 cup coconut
Spread mixture into pan and bake at 350 degrees for 30-35 minutes. Cool completely before frosting.
For the frosting I used:
- 3 cups powdered sugar
- 1 tsp cinnamon
- 3 tbsp milk
- 3 tbsp butter, softened
- 1/2 tsp vanilla
- 1/2 tsp coconut extract
Cut into equal squares and enjoy.
These are so fabulous! You must try them ASAP!!

I dont know what makes me hungry quicker, this zuc bar or the burger in the previous post. Both are the right kind of comforting yumminess that I ALWAYS crave. I say again, it's a good thing you are not my neighbor cause you'd probably hate me after I invaded you house for the 1 millionth time to steal food. :)
mmmm I am making zucchini bread today and you are reminding me why I am doing so. I would not have thought to make bars though. Next week!

Yummm. I've been making that as a loaf for years, recipe from my mom, but sounds even better with icing. Great site, I'm always looking for new ideas with my boys. Do all toddler live for variety? Mine always wants something new!

MMM bars sound different! I have had bread and muffins but never bars :) Will def have to try even though I don't grow delicious zucchini in my back yard!!

Yum yum yum! I used to make something vaguely similar but as I am the only one to eat it I stopped. Maybe these bars would do the trick. They look great!
