apple cinnamon french toast cupcakes with maple cream cheese frosting


Hurray for cupcakes! And cupcake challenges!


Rhiannon from Pink Sugar Desserts and Erica from Dollface Delights are puttin' on a little challenge and I couldn't pass it up!



When I first heard about this fun challenge thoughts of apples, cinnamon, and maple filled my mind. I finally came up with these lovely autumn cupcakes.

I used the following ingredients:
  • 4 large eggs
  • 2 tsp of vanilla
  • 2 tsp ground cinnamon
  • 1 1/2 cups low fat buttermilk
  • 1 1/2 cups low fat milk
  • 1/2 cup packed dark brown sugar
  • 1 golden delicious apple, peeled and diced
  • 12 slices or 5 cups of day old french bread, cubed

Mix up the eggs, vanilla, and sugar. Add in the milks, cinnamon, and apples. Fold in the bread.

Let it all sit for about 15 minutes.

Fill muffin liners full. I managed to get 16 muffins out of this mix.

Bake in a 350 degree oven for 22-25 minutes. Allow to cool.

For the yummy maple frosting you'll need:
  • 1/2 cup softened butter
  • 1 8 oz package of softened cream cheese
  • 1 tsp maple extract
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
Mix together the butter, cream cheese and extracts until fluffy. Add the powdered sugar 1 cup at a time until desired consistency is reached.

Top frosting with a sprinkle of raw sugar if desired.

These are just amazing! Perfect flavors for autumn!

Sophie, it is a crime against nature not to love frosting; but I think you may be able to convince nature to let you off with a warning, since your recently-posted omelette looks so colorful and delicious ;)

Ungourmet, I am exceedingly jealous of this recipe. It epitomizes what I'm trying to do with the Chickenless Kitchen. Once we start thinking outside the box about the basic ingredients in a given type of food (for instance, a cupcake), anything is possible! Thanks and best of luck with the challenges.
