A new and fun recipe is as close as your local library! I found a fun cookbook called A Cowboy in the Kitchen the other day and I've been having so much fun exploring. Most of the recipes look delicious with the exception of Calf Fries with Cracked-Pepper Gravy. EWWWWW! I just cannot fathom why anyone would want to eat testicles! I'll take the gravy though.
There is a recipe for Corn Pudding Pie in there that caught my eye. Of course I can't ever follow a recipe so I made quite a few changes. I also decided to come up with my own name for this dish.

Cowboy Quiche

Note: This recipe is for a deep dish quiche you will want to reduce the number of eggs if using a regular pie pan.
1 9 inch pie crust
8 slices of bacon, cooked and crumbled
1 10 oz can of Rotel diced tomatoes with green chilies, drained well
(You can use 2 cans of the tomatoes if you would like.)
2 cups of fresh corn cut from the cob
1 cup of cheddar cheese, shredded
8 eggs
1 cup half and half
1 tbsp chili powder
1 tsp kosher salt
cracked pepper

Press the pie crust into a deep dish pie pan. Flute the edges.
Layer the bacon, tomatoes, corn and cheese in the pie shell.

Mix the eggs, half and half, chili powder, salt and pepper. Pour over other ingredients.

Bake in a 350 degree oven for 45-55 minutes (less time if using a smaller pie pan and less eggs).
Allow to cool slightly before cutting.

This turned out really great! I think a bit of roasted garlic would be great in this as well.

We call it "egg pie" in our home to avoid any comments about real men and quiche. :)
I'm totally crazy about quiche, no "eggs" however, although I actually know men who ate them.

I don't get eating testicles either. I have a Middle Eastern cookbook that has recipes for lamb testicles and brains. Blech! But I do get this quiche, as I loooove eggs. Wow, looks so tasty!

Well, how's this for a cowboy kick in the rear end - I WORK at the library and we don't have that book in our whole system! Maybe I can do an Interlibrary loan and they can get it from someplace else. Meanwhile I just copied your recipe and am ready to make that this weekend. Wait!
