Trailblazin' Muffins

My dad and his wife Kathy have a wonderful business called Rock Creek Nut Company. Their company is based in the little town of Union Oregon which is nestled in the middle of the Blue Mountains of Eastern Oregon. Rock Creek Nut company offers a terrific variety of top-notch nuts, dried fruits, chocolate-covered treats (nuts, fruits, and organic espresso beans), and specially formulated trail mixes (some of which include Oregon Hazelnuts and Oregon grown Cranberries). I recently requested some of their wonderful Trailblazer Mix. It's a mix of cranberries, pumpkin seeds, coconut, almonds, walnuts, and raisins.








I wanted to make some yummy muffins and I knew this mix would be the perfect ingredient!



Muffin Ingredients

  • 1 1/2 cups whole wheat pastry flour (I used Bob's Red Mill)
  • 1 cup oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup packed brown sugar
  • 1 stick butter, melted
  • 1/2 cup low fat buttermilk
  • 1/2 cup peanut butter
  • 2 large eggs
  • 4 oz Rock Creek Nut Company Trailblazer Mix, chopped
I got about 15 muffins out of this recipe.


Mix together the dry ingredients in a large bowl. Add the wet ingredients and chopped Trailblazer Mix. Stir just until combined. Fill lined muffin cups nearly full.

Bake at 375 degrees for 16-18 minutes until toothpick inserted comes out clean.




I've got to tell you these are so healthy and wonderful they make me want to Blaze some Trails right now!!

You know what, I need to make those and have them sitting around for us to grab and eat for breakfast! Question ~ can you use regular whole wheat flour instead of pastry flour? I know I have some of that. Awesome recipe!!! I need to go check out the little nut shop now. :)

I love trail mix. I love to snack on them in the afternoon especially if I'm working long hours.

That's really neat your dad food company. Love the ingredients in the trail mix you used. Makes for a good addition to those muffins.

I'm a sucker for trail mix - although I eat it all individually....pick out the m & m's first then the cashews, etc. Kind of defeats the purpose. Your muffins look yummy though ;)

The trailmix alone looks delicious already. I'm sure when it has been added to that muffin it became extra yummy!

Usually I keep a bag of trail mix in my desk at school for snacking. I think I'd rather keep a muffin or two in my little fridge!

Just wanted to let you know I used the pace taco sauce in my pasta taco shells. You could use whatever brand you prefer. It would also work with a salsa if you didn't have taco sauce.
