Peach Blueberry Crisp and Shiny, Happy Bees

I thought a peach crisp sounded really good for today. I haven't made one in ages and since I had some very ripe peaches from farmer's market sitting on my counter staring at me every time I walked into the room I decided a better use them or lose them.

Unfortunately, I didn't have quite enough so I also threw in some peaches I had in my freezer.



I also had some frozen blueberries left so I decided it would be a yummy idea to throw those into the mix as well.



I thought the flavor was really quite wonderful in this but I have to tell you, it was a little runny. I think next time I will toss the fruit with some corn starch or flour. If anyone has a better secret to share, please let me know.

Ingredients
  • 6 cups of peaches
  • 1 cup of blueberries
  • 2-3 tbsp of honey
  • 1 tsp cinnamon
  • 1 tsp vanilla
For topping
  • 1 cup rolled oats
  • 3/4 cup whole wheat pastry flour
  • 3/4 cup packed brown sugar
  • 1/2 cup butter, softened
In a large bowl toss fruit with honey, vanilla and cinnamon. In another bowl combine the oats, flour, and brown sugar. Cut in the butter.

Place the fruit in a greased baking pan. Top with oat mixture. Bake on 375 for 30-35 minutes until fruit is nice and bubbly and oats are golden brown.

Serve with vanilla bean ice cream or top with a little whip. Ooh, homemade cinnamon ice cream would be really great too!




I also couldn't resist showing off my sunflowers!!



I noticed the honeybees are all over these delightful flowers.



We originally planted three of these but did not put the seeds deep enough so two of them came crashing down. I'm praying this one stays put.



I am definitely planting more next year.



The bees can use all of the help they can get!

Your sunflowers look beautiful! I should find out if they grow here, they are so much fun to look at. The crisp looks great - I mean, how can you go wrong with fruit and crunchy toppings?

Another yummy treat! And yes, homemade cinnamon ice cream- too. Oh my! Love your sunflowers! We planted a variety of sunflowers this year so it's fun to see them bloom. You never know what kind they are until they open up.:) Lori

Hi Kim - Your crisp looks delicious. I prefer it nice and juicy but do use flour if I want to thicken it a bit.

My neighbor recommends potato starch so I'm going to try that next time. I'll let you know. Bob's Red Mill carries it.

Peach and blueberry crisp: yummy! I was visiting family over the weekend and there were sunflowers in the neighbor's yard. I also saw a couple honeybees clinging to each flower. Cool photos!

From what I've seen the key to thicker pie filling is to add some flour before putting it in the oven. Not that I have any real experience with that lol. It sure looks good!

Glad to see you are "feeding the bees." We are having a bee crisis and, mysteriously, bees are dieing off, which will eventually affect our nation's food supplies as they are pollinators. So, I've taken to planting more flowers in my yard in hopes of feeding the bees because as you said, bees are good!

Your sunflowers are beautiful. Are they the kind of sunflower that you can save the seeds for harvesting?
